It is the bearing that you are hearing and some bearings can just be louder than others. You may also find that as you use your bearing it will become quiter and louder over time. As long as the bearing is still spinning well the level of sound is not too much of a concern. Also some yo-yos shape can amplify the sound coming from the bearing a bit as well so there are a few factors that go into the sound.
For Eli Hops you need to focus on pulling both hands apart at the same time - if one hand is pulling more than the other the yoyo will flip off the string in a direction versus just going straight up in the air. Practice pulling more with throwhand or non-throwhand and you should be able to figure out which hand needs to give more force/pulling.

When you pop the yo-yo up make sure you're bringing your hands together to give it enough slack to go up. Otherwise it will go to the side.
