Was it shot with a steady cam? I love how he presents his food.. it's simplicity, but the simple dash of the pistachio paste and using the bowl as a frame.. it's a beautiful little plate of food.
Ask to be a dishwasher . I worked at a great fine dining restaurant but I started as a dishwasher even though I was a exp line cook. I'm really glad I did because I actually didn't know how to be a line cook in a fine dining restaurant and the sou chef rolondo would teach me little stuff overtime. My first big dammit was the chef called for well done duck breast then I gave it to her then she said it was supposed to be medium rare And she needs it yesterday . My sou chef took a duck breast and put it in the shallow part of the fryer then gave it to the chef. I feel sorry for who ever got a crappy duck breast .
