What happens if you just whip the egg whites without the Sparkling Water and fold the other ingredients in?

I’d imagine it would still work.. you can whip egg whites like that without soda for other dishes so I’d imagine it would work

@@sadyechester6934 that's what I was thinking too. The sparkling soda makes more sense in baking, unless it somehow helps the egg whites lift even more in this omelette.
