If you are unsure of what it can do then better chose a regular desktop. AIO are for people who don't want the hassle that comes with researching & buying PC components.
If you have surplus money, go for new brand for any laptop/desktop or AIO, however if you have minimum budget and want to do your day to day work then mini pc is good enough, I am a System Admin, having 15+yrs of IT experience, I never spent more than 10K for my PC requirement. This time I bought linova mini pc for 12.5K with windows original and its working excellent and fulfilling all my day to day jobs. Think before you spent money.
Mini Pc like intel NUC is far better...can move and carry it anywhere and connect to TV with wireless keyboard ..and connect 3 -4 any size monitor for great multitasking...

The big problem of all in one computer is that spare parts are not available after warranty. You have to sell the computer as trash. I have two Hp all in one computer whose spare part is not available

Usb type portable ssd nvme casings are a thing now, but they have their own issues, search for transcend ssd casing
