    I would recommend adding Indian black salt to the batter to give it that true egg taste. Delish!

    love this! in italy it's a faranata.
    i make a farinata with toasted rosemary, mustard and cumin seeds, turmeric, pepper in olive oil. add diced onion and asparagus. pour the chickpea batter (i also add olive oil and ume vinegar -instead of salt to the batter. i make it more the consistency of crepe batter) over the veg and cook on medium, covered on the stove until it's set, slide it on a plate. put the pan over the plate and flip, cook until brown. my grand kids love it with corn instead of asparagus (they call it corny eggs).

    I use chickpea flour all over the place. Totally inspired by you in lots of them.
    The Omelet I'm doing for a long time. I add a bit more Turmeric for the coloring to much perfectly.
    But I also found a little secret. Instead of water I put cold soda water (sparkling water) from the fridge. This gives the omelet a more spongy fluffy texture exactly like an egg. and it rises much more. Try it out its magic. Also for scrambled omelet it makes wonders.
    Also I have found that chickpea flower likes cold water in general. Then later when interacting with heat the contrast opens up the flower and flavours. (BTW Also Tehini must be made with ice cold water)

    your channel really inspires me to cook good food and be kinder to animals and the planet while doing that. i’m currently only vegetarian, but i am planning to transition to vegan soon. videos like this show me that being vegan doesn’t have to mean giving delicious traditional meals up, i just need to make substitutions

      please don't take advice from poorly informed people! Your body does NOT "need" animals fats! That has been proven time and time again! Some few people may have difficulty assimilating the nutrients properly from an all plant-based diet, but that is very much the exception. one that people who feel the need to justify their meat eating use. That would be like a vegan using the example of a person who is actually allergic to meat (yes, it IS a thing), as a reason to go vegan. I cannot imagine how one could make the statement that ALL vegans are "addicted to sugar", lol. Funny how I've never seen added sugar in any of these videos, unless it is an intentional dessert. Making the statement that vegans "destroy their guts with to much fiber" is also incredibly uneducated. Amazing, when you consider how many processed foods make a big deal of how much fiber is in them, because the average American diet is Far To LOW in fiber! Beware the Trolls, hun, they are usually very skilled in making idiotically uneducated statements, lol!

      Are you kidding me?! Look at this video. From what I can see that's not about veganism, I can see people being extremely obsessed with food, in a negative way, and they just happen to be extremely obsessed with food that is plant-based. Additionally, all the footage looks kinda old to me. Btw, we can show you the same footage of people being extremely obsessed with food- food that happens to be animal-based. They won't look healthy either. Don't just trust this anti-vegan dumb footage.
      Rhiannon, if you are having any doubts concerning veganism and health, I would recommend you to reach out to any vegan doctor, dietitian, body-builder etc. They can help you out with all your questions, how to substitute, meal plans etc. There's plenty of proof that you can be super healthy when being vegan! :) And you're doing amazing already!

    In case anyone was wondering.
    Ras El Hanout-
    1 teaspoon ground cumin
    1 teaspoon ground ginger
    1 teaspoon salt
    ¾ teaspoon freshly ground black pepper
    ½ teaspoon ground cinnamon
    ½ teaspoon ground coriander seeds
    ½ teaspoon cayenne
    ½ teaspoon ground allspice
    ¼ teaspoon ground cloves

    Or, I guess, you could have the best of both worlds: start it in a pan and then transfer to a baking tray to finish, if your frying pan is not oven-proof. Then you'll have a nice caramelised bottom, too! It looks really delish 😍

    This recipe is top notch. I made it for my lunch to see how well it set (I have had bad luck with gram flour recipes in the past as they never cook well for me). I baked this in the oven as my saucepan isn't oven safe...what a fantastic recipe! I am having non vegan friends over for lunch soon and I will definitely be serving them this, the saltiness of the olives is paired beautifully with the sweetness of the other toppings, which gives me hope that my friends won't miss the cheese! The omlette fluffs up like a dream! I tinkered with the herbs and spices as I didnt have ras el hanout and I was impatient to make it today, and it still tasted awesome so that's proof it's a keeper! :-D I'll definitely be making this again, thank you for the continued inspiration, Gaz 😊 And congrats on making 500k!

    This looks amazing!! I grew up on torte de ceci! My Nona would make the batter and let it sit on the counter for about 8 hours, the batter becomes so tender and creamy on the inside and crips on the outside!

    seriously, I made this twice today and I'm so in loooooove! I don't have an oven-proof pan and I was a little sceptic about just putting it on a baking sheet so I started with a pan and when it looked like the bottom might have caramelized, I slid it onto a baking sheet and put it into the oven. IT WAS PERFECT

    I just made omelet today. :'D
    Mine only had onion, garlic, red bell pepper and mushrooms but I added some black salt for an eggy flavour. Yum!
    Your version looks fantastic though. I love Moroccan spices.

      i just made this too and while it tastes good my texture is a bit softer/mushy compared to having a crusty pizza-like caramelized bottom like he has. im curious if its because my heat wasnt high enough or cooked in pan long enough before throwing in the oven. so when i tried to cut and plate it started to break apart

    Aaaagh!Beautiful! Lovin the old school spatula á la 50's. They are the best after all! I eat this multiple times a week (less fancy but fancy enough), nutritious and good! Vegan love on a plate! Keep 'em comin'!

    Looks so yummy. Socca (pronounced same as soccer btw) is from where I live around Nice, I love it. It is just served with black pepper and I also use as omelette base with bit of Kala Namak for more flavour. Definitely going to try with some Raz el Hanout next time as I love that too 😊

    This looks delicious! Im curious if folding in whipped chickpea liquid (used to make a meringue) would give the batter more volume and a softer airy texture that resembles eggs a bit more.

      i generally have not found aquafaba (chickpea liquid) to fluff just from folding it in, in a situation like this. You would really have to create the meringue texture first, I would think, and with the oil and frying, I doubt it would hold the texture. Just my opinion, from my experience baking with aquafaba, and using it in more basic ways (wash for breading foods, etc).

    One way to avoid it sticking is to not try to move it till it gets a good 'caramelized bottom' lol... use a turner to check under the edge and when slightly browned, it's releases easily. I filled and folded mine, and it was great. Thanks for posting.

    you can try to put the salt that tastes "like" egg, i see some youtubers using it. your content is from my point of view, one of the best vegan food videos around youtube, keep doing it

      Kala Namak (black salt). I bought a 1 pound bag for around $12 and it lasted me around 2 years.

      @@cipriantothazan294 yeah. You only need a pinch of it cuz it definitely is eggy and it is salty. I wouldve still had some but mine came in a resealable bag and one time i didnt seal it all the way and it spilled. I plan on buying it again though. Or the cheaper one that comes in a salt shaker type container.

    I make the batter and add tomato onion green pepper salt and carrom seeds ( Bishops weed) and make vegan omelette
