I discovered Picanha from Guga's SousVideEverything channel 5+ years ago. 1000% agree that it is the best bit of the beast. And if you can find the right butcher - it is an absolute steal. I've had both "regular" and Aus Wagyu and both are great. I used to mostly cut into steaks first - then Sous Vide - with a quick sear to finish off, but got lazy and started doing it your way like a roast (although usually finishing it in the oven) With the weather warming up - I may drag the Weber out and finish it over some charcoal.
