    Can you inoculate in February cold winter weather. We have weather that is bouncing above and below freezing ...in Celsius it's -10 to +10 here in Ontario.

    Mushrooms, Shiitake in particular, impart a flavor to beef dishes called Unami, considered the 5th taste sensation, sweet, sour, bitter, salty, and Unami. Make a perfect compliment to steaks. You can find Unami flavorings based on shiitake mushrooms on Amazon. I live in a similar climate and also have an abundance of honey locust. Time to cut a few special logs.

    sometimes you can end up with edible mushrooms growing out of the ground where you were farming then after substrate and garden mulch and wood chips have fallen to the floor below

    Have you guys ever used gray birch for shiitake inoculation? Betula populifolia. I am surrounded by them on my property. Very few paper birch. Wanna cut my trees soon. Thks for any advise. Cheers.

    I'd never make any money growing them: I would simply eat them all. I wouldn't be able to help myself! :)

    Did you have to water the logs to keep them from drying out at all?

      If you go 3-4 weeks with hot temps and no rain then it is best to water them. This group of logs got watered once in the summer of 2018. We set up a lawn sprinkler from a pump that we hooked to our pond.

      1.25" diameter fiberglass poles, 20' long. I also used some steel pipe on our first bed. Either work fine fastened to steel posts.

    if you are an urban farmer and you manage property suburb or urban. The logs work just as well as country love go make that mushroom money

    I think you can used dead logs. You’re right that there’s probably already fungus in it or something, but that’s one reason like some growers in Japan will then sterilize the logs. If you don’t do that then sure don’t use dead logs.

      It'd to much work and time to risk using dead logs. Never had a log not produce mushrooms by using green logs
