- The NFA burger out of Dunwoody, GA has been voted "Best Burger" in Georgia, Atlanta and even Best Burger In America by several publications, such as Food And Wine Magazine. I had to see what all of the chatter was about, so I made my copycat version of this acclaimed burger. And WOW was I impressed! Finally a burger I've had! I live in Atlanta and yes, Dunwoody is in north Atlanta. Billy couldn't be a nicer guy, he comes out to talk to the customers regularly. I would be surprised if the sassy sauce had gochujang in it.

For a similar sauce I use mayo, mustard and "adjika". You can find adjika in European specialty groceries, I'm sure you have one in San Diego. It's a spicy, red pepper paste popular in eastern Europe. It comes in various levels of "heat" but I usually get the strong (gustra!) paste and mix it with other ingredients in a sauce.
Another good one is "pinjur" which is a red pepper and eggplant "salsa", for lack of better term. It isn't as spicy hot as adjika. It is great as a substitute in sauces for ketchup or chili sauce.

Ajika is a dry spice blend at most trader joes and brings similar heat to cayenne.

Great lookin burger Greg. I don't think I've ever seen you make a bad one though, unless it had peanutbutter on it. Your burgers are always on point. When you were putting the pickles on the burger 6:37 you called them olives. You said Mt Olive so many times I can see where you could get tripped up. I love Mt Olive pickles, they're the only ones I buy, not only are they less expensive, they just taste better than the rest. Great video as always Greg. 👍

Greg I just moved from Atlanta. Dunwoody is north of the city. NFA is really good. I'm in Palm Coast Florida now and just had 2 really impressive burgers from The Brown Dog and Slapped Kitchen food truck.
You don’t have to worry about a heart attack with this burger, you’ll drown in the juices well before that!! Hell of a cook, I can’t wait to make it.

A lot of the time I can skip pickles but Mount Olive is good pickles. I think that they do Hot and spicy pickles now maybe even Hot and spicy bread and butter pickles which would be good. Now that Korean chili paste sounds good I have never tried that before. Deep Fried Habanero chips would be a good touch to finish it off...

Question, how do you feel about ciabatta? bread as burger buns? It’s what I use for the burgers I sell. The way I toast them is with mayo, the mayo fills the air pockets and so I toast just enough to get crunch but leave mayo in the pockets. Very pleased people love it, hope it serves as an experiment you can try. If ya do let me know HONESTLY. I like honesty

My Grandparents lived in Dunwoody, this is right around the corner from their house, I've been a couple of times- Its a pretty damn good burger. I still prefer the original H&F Burger, but its hard to argue that the NFA burger isn't on the same level. Not Burger-related, but nearby NFA is an Italian Deli that has the most amazing Subs. But yes Dunwoody is one of the original Atlanta suburbs, just Outside The Perimeter (HWY 285) north of Atlanta/Buckhead.

I totally get why they use Mt Olive. With the sauce and cheese and all, they have a great, strong flavor that'll really shine through. I'm gonna try to make that sauce.

NFA is perhaps the best burger I've ever had. Spoiled that I live just a couple miles away. Part of the allure is the fact that it's inside the gas station.
Mt. Olive is the best burger pickle, because it's a real pickle. Natural fermentation, not cucumber in vinegar.

I've bought Mt Olive pickles once... emphasis on once. I think they have a weird aftertaste from something in their pickling spice. I just stick with Clausen or Vlasic these days. Not worth the few pennies you save to go bottom shelf on some things.
Grillo's are superior .. look in by the cheese ans hot dogs at the store
The taste was fine on the pickles I bought, but I did notice that many of the chips were tore up in the jar.
Also, it needs some grilled onions and Bacon...
the description of the sauce almost sounds like yum yum sauce. mayo, ketchup. mirin for the sweet, rice vinegar for the sour, garlic powder, pinch of cayenne, paprika. a splash of water (or shrimp stock if you have it) to thin it out

I'm originally from San Clemente but I now live in North Vancouver British Columbia. I miss my California burgers and thanks to you I have got the skills to make my favorite burgers.
There a few I'm really interested in that I really really want to learn how to make. I've done some testing with one of the requests and it came out pretty good. The steamed cheeseburger from Ted's in Connecticut.
I tried making it my own way since they have a special steaming cooker that the burgers are molded into. I just boiled water in a large pot, put a bacon grease screen over top and placed a 3.5 oz patty on top and covered it. Then once almost ready I added a really creamy Wisconsin cheese. I looked all over for it and I'm thinking I got the same brand. They're super secretive about it they even shred the boxes. I made it over 10 years ago and I totally forget where I got the cheese but it's one of the most important for the flavor profile. Not overly salty cheese.
The second burger I would love to see you make is The Hat's double bacon pastrami cheeseburger. I always got it with grilled onions. It's so good. I ended up getting the single patty version and it actually tasted better and a bit more balanced. The Hat world famous pastrami. Brea California they have one in Lake Forest but that's still about 1.5 hours from San Diego.
I have a few other burger places I'll request later. I just have to look them up. One was a guacamole smash burger, and the other was a classic Huntington Beach Costa Mesa burger. I just have to find it first. You'll love them.

Wait-wait! I've seen you copycatting 80+ year old burgers more accurately due to sufficient amount of sources, but you can't make a good copycat out of a 4 year old (America's best) burger because there's not enough info to be found?
Yes. The burger itself was easy, there just wasn't a whole lot of info on the sauce. This being said, I nailed the description of the sauces flavor profile.

If you don't like nasty pickles... make it without the nasty pickles.

This is why i am afraid to try new sauces because i absolutely hate mayonnaise and anything creamy has a mayonnaise base , i love slaw and tuna salad but i make them without mayonnaise or sometimes witth slaw ill use barbecue sauce.
Give it a try. This doesn't have that mayo taste.
