You can use the amount of ingredients

Thank you so much for your videos. I just made my first meringues (they are in the oven now) and I felt like I was doing this all wrong and nothing was coming out right based on the recipe description. Everything looks like it does in your videos and it's giving me the confidence that I did things correctly.

My swiss meringue cookies was very sticky after cooling down in room temp for 15 min. I have dried it completely but it will be stickier later. Can you help me plz? I live in tropical country with really high humidity
Me too.... Very high humidity and it becomes stickey after some times..
. Then i searched in google and it says its normal... And in another site i have read that put the merangue cookies in bag or something in u wanna store then put a silica gel bag... It will keep them dry for longer time...!!! Hope it helps!!

simply beautiful, as always! Sugarbean, may i ask what you do with all your leftover yolks? i use a lot of eggwhites making almond bread, macarons and meringues but there is only so much custard i can use, and pasta i want to make. I'd love some ore ideas. Lately, out of desperation, I have begun using yolks and water to dip schnitzels in but i have so may frozen yolks, some with a little sugar, others with some salt in my freezer....
In your last swiss meringue video, at your description box, i read 2 ingredients.... Ones use almond powder and sugar powder and the other only use white egg and sugar.
