    I’ve watched loads of your vids and this is by far my favourite video. It has everything.

    Gonna give this a stab tonight, I have cooked this many times via Gok Wan, love this on boiled rice. Comfort food and pretty healthy too.

    I hadn’t tried beef and tomato for years, then cooked this last night. I cannot tell you how delicious it was, just off to the supermarket now to get more ingredients for tonight. Last night we had it with rice tonight we’re having it with noodles. Once again I bow down to you both for giving me the confidence to cook such fantastic food!

    This is the best dish I have every made a Thank you so much, I haven't had this for about 35 years, I used to get this in Chipping Sodbury back in the 1980's, so thank you firstly for the fantastic recipe and last but not least the fabulous memories you've brought back 👍👍

    I just love watching you both together. You can just tell that not only you two love each other but you genuinely like each too. Your cooking make my mouth water. I just tried this dish for the first time last year and kept wondering how they got that special different tomato flavor in it. Now I know and I’m going to try a go at making it at home instead getting. take out .

    It's both sealing [in the juices] & searing [refrerencing the colour]. I've heard Ramsay and others say both for the same exercise.

      That’s a common misconception, that even mega chefs get wrong, the denaturing of the proteins isn’t great enough to keep the water molecules in, someone wasted millions in research to find that out, money better spent saving lives if you ask me.

    I have made this before from your book and it is superb😋 I made it today and added a teaspoon of sriracha to the ketchup to give it a bit of a spice hit and it came out really well.

    Just cooked this dish. Awesome!! I've decided to use no salt in my Chinese dishes. There's more than enough in Lee Kum Kee's soya sauces, both dark and light. Instead I use a tad more MSG than you say, and it takes the dish to another level :)

    I got this in a Chinese restaurant a couple weeks ago and it let me down, the meat was really chewy they didn’t cut it thin enough, wish you guys cooked it for me that looks perfect, will give it a try!

    Many years ago, our local Chinese takeaway sold a honey and garlic roast pork dish... it was absolutely delicious but I’ve not been able to find it... any idea how to make it? This was back in the early 90’s so I can’t remember the basic ingredients... if you’ve got a recipe, I’d love to see a video!! Keep up the great work 🙌🏼😘

    I’ve always understood that boiling meat makes it tough. Does velveting protect the meat from this?

    try cooking chicken breast wrapped in cling film and then foil, cooked at 90c until 80c+ internal. Head chef at my last kitchen job taught me the technique. Very, very moist chicken

    Help! I'm about to cook this, but I'm confused. 600g of beef at the beginning, which is a lot of beef - 3 or 4 people maybe? But you end up with a meal for one. Are the ingredients for the sauce for one person? Please help. PS starting in ten minutes!!!

      Yeah we corrected some for the 2nd print, its kind of because weve never measured anything ever and in the videos i get mt teaspoons and desserts spoons mixed up alot so i say on and mean another, some time i catch them in editing and sometimes i don't 😭

      Non stick for home use but if younhave a jet engine of a wok commercial wok burner then old school wok

    Regarding your data loss problem, you should invest in a NAS (Network Attached Storage) with multiple drive slots and configure this in RAID for redundancy. This way if one of the hard drives fails, you don't lose your data assuming you replace the drive before a second one fails. Lots of RUclipsrs use this kind of system since they're creating so much footage. Synology is a good brand I often recommend.
    Offsite backups are also essential. Follow the 3-2-1 rule for data safety, (3) copies of your data, and store two (2) backup copies on different storage media, with one (1) of them located offsite.
    It takes a bit of investment, but I imagine with all the videos you make you're producing out quite a lot of data and it's probably spread over a whole bunch of Hard Drives rather than in a central repository.

    Oh Em Geeeeee.... One of my favourite dishes back in the day (I thought it had a baked bean flavour, now I know why, the ketchup!
    Choo is correct, we all used to eat it by the bucket load back in the 80's and 90's. Thank you for sharing your recipe. X

    top video yet again , i so look 4ward to you two. i have a question for you and hope you can help as your the only guys i trust, i have a 200 gram block of tamarind which i want to use for pad thai but how much water should i use to prepare as so many different ways on the web.hope you can help me guys.

    You use the MSG and love it, if I eat it I’m ill and awake all night, think I must be allergic.

      Your body naturally produces it, its also naturally occuring in large amounts in mushrooms, cheese, soy, tomatoes, anchovies, sea weed, the list goes on. How ever if you think its the MSG we suggest dont use it, after thing affect people differently :)

      Yes, I can eat it normal amounts just not any added. It makes my dreams technicolor!! Weird!!

      I get the same reaction! Really weird vivid dreams. I do think that some people can be sensitive to it, as with any type of food. I have issues with other types of food- dairy and gluten too.
      Whereas my Mum has no issues with MSG and isn't allergic to any other foods.
