This happens when streamers pay attention to the sound quality and actually put the tapping and hit sound at the same time, because irl tapping sound is always happening before the actual hitsound. So many replays where these sounds don't match and that's a shame

Some mildly interesting facts about the last note of 1:57
He literally hit it by 1 pixel, as in he was only 1 pixel into the hitcircle
He tapped 1 frame after entering the hitcircle, and then after tapping he started leaving the hit circle on the next frame
So an order of events frame by frame would be:
1. outside of hitcircle(12.37 pixels outside)
2. inside of hitcircle(1.3 pixels inside)
3. deeper inside hitcircle(1.78 pixels inside) and tapped here
4. leaving hitcircle(.34 pixels inside)
5. out of the hitcircle(13.25 pixels outside)
also when he tapped this note, he tapped quite noticeably later than the other notes of the diffspike.
I'm not saying he's cheating btw, just that there is an absurd amount of luck for that note in particular... but of course its still possible that he's cheating
