      @Lyudmil Genov they are very good when cleaned, seasoned, and cooked properly. Smell terrible when cooking. Taste great. I recommend a good soul food restaurant as most that serve them, know how to prepare them, God bless

      @Lyudmil Genov you are more than welcome my friend, tripe= chitterlings= chitlins', they are all the same thing. In the south of the u.s. we call them chitlins'.

      @Lyudmil Genov then there is a great possibility you will like chitlins'. I put 1 or more codiments on mine. Hot sauce or vinegar are great on them. I hope when you get to eat them, they are prepped and cooked properly, if not cooked long enough or if to much they are rubbery like calamri, if right, they are tender and delicious.

    Awesome!!! In Mexico we eat the with hominy!! It's called Menudo, and we eat it when the weather it's cold and in the morning! Sunday was my favorite day of the week because that's when they sell menudo. Thank you for your recipes

    This being August 2011, it was before Chef John hit his comedic stride. At 2:56 he says "You are gonna wanna be the judge...you definitely want enough liquid..."
    If this was 2012 or later, it would have been: 'You wanna be the judge of your own bovine fudge' or 'tomato sludge'.

    Tripe was one of those dishes that you grew up on. My parents never made us eat it and I've lately thought about needing a recipe, a good one, that would make tripe a pleasure to eat. This looks like one. You know what they say, no guts no glory.

    Dear Chef John: I have long admired you and your eloquently stated/ well explained and easy to follow recipes. You rock!
    BUT I regret this time I'm forced to take issue with you calling this recipe "Trippa alla Romana"... I'm sure your version is delicious but please do not call it "Roman Style". In fact the ingredients you list and the prep method have nothing to do with Trippa alla Romana, a specialty that has resisted the centuries in old Roma. I'm Italian -- not from from Rome but Florence -- but we all love trippa! - Also Romans would never use Parmigiano but instead Pecorino Romano... that's exactly the ingredient, along with Mentuccia Romana (slightly different from peppermint) that makes it "Roman style". Also chick peas are never used but it is essential to include celery and carrots. Some people add red chili pepper.
    I'm looking forward to continue to follow you online with your extraordinary talent and your devotion to fantastic cooking. Grazie per avermi ascoltato.. o almeno lo spero! :)

    OMG, I made this last night and it was AMAZING!!! I also used your recipe for the Marinara Sauce. Thank you so much for this recipe Chef John. My family loved it. BTW, Chef John's Marinara Sauce is the best I've ever made. And yes, the mint is the secret. A must for this dish.

    well, never gonna know what that American Marinara sauce is... there is no such thing in Italy, but well... very similar, just without the fresh Mint, you can look for Spanish Callos con Garbanzosor Callos a la Madrilena... ;)

    Tripe ( en.wikipedia.org/wiki/Tripe ) needs to be cleaned extremely thoroughly to get rid of that "barnyard aroma".

    Also, if you like the following canned meats, then you like tripe. The 3 most well known, and there are others, are spam, potted meat, and vienna sausages, all 3 have tripe in them

    Few things gross me out. Tripe is one of them. It's just my kryptonite. Does it make me a lil bitch? Probably. But it doesn't change the fact I cannot stand the sight of tripe. I'd rather see my own innards as they're being sewn back in
    On second thought, maybe Tripe isn't that gross. But it's still stomach or stomach lining. Or something.

    I live in Rome and just made some today, garlic is not part of the recipe, beans are not part of the Roman recipe, as for the rest, it's fine, I also use Parmigiano cheese but the true recipe calls for Romano Cheese

    I recently had tripe for the first time while on holiday in France and it was... nice but a little soupy. Not a whole lot of special flavours. This however looks a hundred times better! Next time I go to the butcher's, I'll ask if they can order some tripe for me as they don't usually stock it :( Looking forward to trying this dish and thank you so much for sharing it :D

    In Hawai'i it is called kū ʻōpū pipi (stew/stomach/cow). The first step, boiling, is awful, because of the foul smell. But, the end result is delicious. Your version looks awesome, particularly with the crusty bread. Mahalo nui loa (Gratitude).

    For anyone short on time and want to do the first half quick and dirty: 1kg of trip, 4 cups of water, add salt etc etc, everything into a pressure cooker. 12-15min. Done.
    Let it cook while you do the sauce and you can get this dish sorted in half of the time. =)

    I haven't eaten tripe in ages, long since i was a kid. Then i saw my favorite characers from video game eating and enjoying dish with it.
    And then i found out that Chef John did a recepie with tripe!) Cooked this dish yesterday, This is super good! I think people shouldn't be so picky and give it a try! Its so unique and delicious!

    I have for breakfast ! in Mexico. My friends in Canada don’t even know what is Tripe ? When I visit Italy every time in Trieste I stop by restaurant and have plate ( large !) of tripes.Now I learn from you how I can make this fantastic dish by my self.     I tried this dish a couple of weeks ago. I bought some ‘Rinderpansen’ in a German ‘Edeka’ supermarket. It didn’t have the honeycomb structure, though, it was more like a chunk of white skin. Well, the sauce was alright, but I can’t say I would like to have it another time. But I'm always curious to out something new.

    When learning to make menudo, I learned that you have to make sure you buy the bleached tripe AND salt and scrape (with a knife), then rinse and repeat over and over to get the tripe clean enough to eat. (Yeah, that’s why I only made menudo once, even if it came out delicious. Like, who’s got that much spare time?)
    Is it possible to buy it already so clean that you just cook with it?

    Many years ago I tried cooking tripe to make Philadelphia style pepper pot . Well it stunk bad it went in trash but many years ago a coworker gave me a sample of tripe from a pizza shop in red sauce and I like it so I went back to cooking tripe but only the honeycomb stuff . It costs more but it's better

    It looks like tripe is making a comeback all over the world. From Dominican tripe stew, Romanian and Turkish beef tripe soup, Italian (I must try this recipe), Mexico...and it's about time.

    How do you prep your store bought tripe before final boilling. Tried yr recipe, it tasted like bleech.. that's how i found out you should pre prep yr tripe ??

    You're forgetting to mention the part where you should soak the tripe in something acidic to get rid of the oder that it initially gives off after thawing out. Without that bit of advice anyone boiling their tripe is going to stink up their kitchen and maybe the entire house.

    The way we do it in hotel is almost the same way but in sauce we add carots and litle celery and put tripes and bit of bread crumbs and cook for 20 min more

    In my family, we eat this, but we cut the tripe in thin strips and mash the beans and serve over pasta. Mostly spaghetti.
