Whoohoo love this video. My family of five are also doing a no spend challenge so we're working on eating what we already have in our pantry, fridge and freezer.

Do you do "no spend" challenges in some way in your home? Let me know below! I know different families do them in different ways, not just with groceries!

Now that you are eating eggs, you might like this Frittata recipe:
    Frittata
    8 oz. mushrooms, sautéed
    1/2 cup olive oil
    garlic
1 baking potato, peeled or not, thinly sliced
    1 small onion, thinly sliced
    1 small zucchini, thinly sliced
1 red (or green) pepper, minced
spices: thyme and black pepper and salt
    7 large eggs
    Preheat oven to 400oF.
Add oil to baking pan or iron skillet and heat in oven 5 minutes.
Arrange potato, onion slices, then garlic in pan and bake 20 minutes (25 min. if potato unpeeled).
Arrange zucchini and mushrooms on top of potatoes and bake 10 minutes.
    Sprinkle peppers over other vegetables.
    Beat eggs and spices.
Pour eggs over vegetables and bake until eggs are set and sides have puffed,
    about 20 minutes.
Top should be browned and a knife inserted in the middle should come out clean.

I check my fridge every day to make sure we're using up everything before it goes bad. Sometimes I put things in the freezer to use later, or I'll add to the leftovers to make a new meal.
Making sure I don't throw away even small bits of leftovers has made the most difference in our shopping budget!
So I clean out the fridge and check the pantry the day before I shop so I'm not buying duplicate items and every bit gets used.

I do clean out the pantry weeks, but my goal really isn't about saving money, but not wasting food -- which ultimately saves money after all.😂

Love a pantry challenge. Been doing one all month. Makes me so happy to know I’m not wasting food. The creativity is so fun also.
    Glad you are feeling better.

Another great video! We are doing a no-spend challenge right now for all groceries except produce as well. You always provide meal idea inspiration, I appreciate it!

You also reminded me I have some tofu and potatoes I need to use. I bought some tortillas so I could batch cook potato/tofu burritos to keep in the freezer. I really want to get use a small deep freeze so we can batch cook and not scramble last minute sometimes to get a meal made.

I love these videos. I am trying to learn to use up what i have. Food waste is such a huge problem in the US. This will help to be more mindful in using what i have on hand.

Those dates are looking like dried saddle bags 😂 When I end up with raisins like that, I have to plump them in hot water if I’m using them in anything but oatmeal. I desperately need to do a use it up week or two, but my winter blues keep me from planning too much. So I’m doing my best. Last thing I made was a super yummy white bean soup. I had a can of coconut milk I didn’t end up using, so I search soup recipes to use it in. It was hard to find one that wasn’t a curry; sorry, not a curry fan, I tried lol Anyhoo, this soup is now my new favorite and I probably wouldn’t hav tried it had I not been trying to use up what I had.
