What about quitting your first job? When should you do it and what should you look for in a new job?

I would say, when you are losing market value.
Your market value is dependent on how familiar you are with the main ways companies do work and how well you know their tools. i.e, if you don't work with things that transfer between companies, you are losing market value.
Once you know the basics that is your best strategy to keep market value. To further increase it you should look for jobs that either gives you a broader range of skills or gives you a role higher up on the ladder.

The tools, common practices and team rituals.
The people change and system designs change but after a few years every job is the same with the same problems. Though this ofc differ depending on how broad your profile is.
