Out of curiosity, why do you cut the chicken into cubes before cooking? I mostly see people cook the pieces in bigger chunks and then cut them up. Is it to get more surface area with the marinate/seasonings?

Welcome! Great question! I space it apart so it cooks better at a high temperature and gets a nice sear on it! If we overcrowd it, the temperature of the pan will drop too low and our chicken will be white with not as much flavor!

Several things I’d say. 1.) make sure chicken is patted dry and well seasoned 2.) use a nonstick pan and set on medium-high heat 3.) add a touch of avocado or neutral oil, about 3 tbs 4.) place down the chicken, space it apart, down overcrowd, and don’t touch it too much 5.) once the edges become brown and starts turning white up the sides, flip it over 6.) after that, let it cook for 1-2 minutes then remove quickly
I created a video on it, but you can honestly prepare as many as you’d like. Whatever I eat within 2 to 3 days I put in the fridge. Everything else I put in the freezer. As I eat one from the fridge, I take one from the freezer and put it in the back of the line in the fridge to defrost. They last up to six months in the freezer.

Here it is: Ingredients: -3 lbs of chicken breast, diced into 1”x1” pieces -3 tbs neutral oil, plus more for cooking -1 small can of chipotle peppers in adobo sauce -1 tbs garlic powder -1 tbs onion powder -1 tbs smoked paprika -1 tbs ground cumin -2 tsp dried oregano -2 tsp salt -2 tsp pepper Instructions: -add chicken into a large bowl; add 3 tbs of neutral (avocado, canola, vegetable) oil and mix in the seasonings listed above -add in one small can of chipotle peppers in adobo sauce and mix well; avoid bursting open the peppers to prevent the chicken from being too spicy -cover the bowl with a lid and marinade in the fridge for at least two hours up to overnight -allow the bowl to sit at room temp for 20 minutes before cooking -set a nonstick pan or skillet on medium-high heat and add 3 tbs of neutral oil -add some of the chicken to the pan, ensuring that the pieces are spaced apart evenly -cook one side of the chicken until the edges turn white, about 2-3 minutes -flip the pieces of chicken over and cook for another 2 minutes -transfer the cooked chicken onto a baking sheet to rest -add more oil to the pan and cook the rest of the chicken in batches -prepare the meal prep containers and add desired sides and pairings -divide the chicken equally into each meal container -store in the fridge for up to four days or in the freezer for up to six months -enjoy!
Haha ouch honestly I’ve been there before (more than once)! It just happens, especially when stove top searing on cast iron. That’s why I typically grill or air fry it now. Or I’ll just cook a smaller batch without scorching it too much!

Breast can be made very juicy but it's more delicate. You should butterfly cut the breast and make sure you take it off the pan just a couple degrees short of 160F. After resting, the chicken should be just at a safe 165F and it will be so juicy when you cut it. Trust me though, you will need a proper meat thermometer because there's little margin for error. But I definitely do enjoy the simplicity of cooking thighs and how they seem to get develop a more pleasant texture the more well cooked they are and don't get dry until they start to approach 200F internal temp.

Normally I do cook the whole thing! Exactly, more surface area for seasoning and it just cooks quicker!!

I wash the chicken for some recipes like stews and depends on the cut I’m using, but typically washing isn’t recommended. Very cultural based!
