Thanks for another very enjoyable video. I've never smoked fish, and your method looked fantastic, I hope to try it some day. I noticed that after grinding the dry condiments onto the fillets in an even spread, when you brushed on the honey it seemed to sweep it around and wipe much of it off onto the brush. Some parts of the fillet ended up with a concentration of powder while other parts had none. If you brushed the honey on first, then ground on the condiments, you'd have a nice even dusting over the whole fillet. To go further, I would probably try applying the honey, then condiments, and putting it back in the fridge for half an hour before smoking, to maximise absorption. As I admitted, I've never done it, and you've been doing it for years, so there are probably good reasons for doing it your way. I look forward to your next one.👍

This is an excellent video, thank you, we must try that rig for kahawhai. BTW, I used your style of cutting the bonito and red cotton with two hooks and we caught snappers at Devonport wharf. I ordered a bunch of cotton from Whakatane. Really happy!
