    This is actually really cool. Didnt just give a single answer for a specific cut. It showed a good method for deciding how to cook any type of beef. I like to experiment, so I'll prob remember this for the rest of my life. Thanks for this!

      Thanks for the kind words! Sometimes a cut of meat looks so nice, but after it's cooked it's chewy. When this happens, another tip, I end up chopping into little bits, like carne asada, so it's easier to chew.

    Winco is selling Denver steaks labeled as "boneless country style ribs". They are an amazing value if you can get the good cuts, which look a little different than yours. Hot sear to med to mid-rare. Probably my fav cut right now. $5.98/lb today in mid-2024

    Loved the pan flip. Lovely stew for chilly pacific nw nights.

      The pan flip comes in handy when I forget to get the spatula. It is a nice stew. The actual beef barbacoa I had at the restaurant was not as soupy. However, the extra broth does take the chill off the cooler PNW nights. :-)
