I just made the first recipe, the avocado toast with the pepper strawberry salsa, and it was delicious!! Top the avocado toast with the salsa and some strawberry slices and a sprinkle of vegan Parmesan! So so good 😋

LOL I just cancelled my service with PC, the dishes are all about 900 calories per serving and include processed ingredients, i.e. vegan sour cream/cheese/etc. in every meal. Plus I consistently was missing ingredients each week in my box. For the price they should triple check those orders lol! As a Spanish I am (and gazpacho fan as well), I'll recommend you using some cucumber, garlic and some water in the gazpacho next time you try it out, that'll be very tasty. Also, it's great with olive oil, but I know you personally don't consume oil. Nevertheless, it looks really original with those strawberries, guess we'll have to try it!
I agree that I don't really like the plastic, but I think that we also have to recognize that everyone is at a different place in their lives when it comes to consumption and zero waste, etc. If these boxes can help someone transition to go vegan or eat more plant based meals, I think that that is a wonderful thing!

You always have to pay more for loose fruit and vegetables than prepacked stuff anyway and sometimes hardly anything is available without plastic wrapping at all! I had to buy iceberg salad and those big, not very fruity tomatoes, because everything 'nice' was in plastic packaging. Even the cucumbers! Why do they wrap single cucumbers in plastic?? It's mad 😠 I mean, I by no means aspire to a no waste lifestyle, but this is such easily avoided packaging. Or should be...

I've lived in 2 different countries in Europe & have done grocery shopping in too many to count, also was in the USA for a while & so far in my experience 99% of the time the loose produce is cheaper or at least the same price as the prepacked ones, it just can seem more expensive if you pick out more or heavier ones that are in the packages, but then you're just paying more because you end up getting more.
IrresistibleCuteness I heard the reason they package everything in plastic is to seal the atmosphere inside, in order to prolong the time before stuff goes bad.. It costs less to plastic it, when it reduces the waste created by natural rot by 2/3.. Making food that would normally be thrown away available for consumption sounds reasonable to me, considering how many mouths needs stuffing.. I dont have all the facts, so take it with a grain of salt, or don't listen at all of you're watching your sodium intake 😒
