Nopales alone don't taste good. But you could try making it like pico de gallo (nopales, tomatoe, onion, cilantro) with some fresh cheese, chicharrones and a pinch of salt. Eat it with nacho chips or tostadas. You could also try tortillas made of nopales (they don't taste different compared to regular tortillas though).
Where I'm from in the Midwest we also call non-authentic non-fast-food tacos "California." Like, not explicitly "this is Cali style," but it'll be a weird mahi-mahi and swiss chard taco at a place called "California [Something]"
