Overriding by itself won't do anything but use more power, you could override the voltage setting for your CPU or GPU but that won't give you faster results. Override is just you manually entering the Voltage that your PC will use. Overclocking makes your CPU or GPU faster, making something like brute force (as the topic of the video) a faster process. It is overclocking not overriding. You would use override to overclock though, but that's to optimize the voltage usage depending on your overclock, so your CPU doesn't shutoff due to insufficient voltage, or waste energy and heat up if too much voltage is used than required. What gilfoyle did was indeed an Overclock as a faster clock speed = more instructions in a finite amount of time.
