Homemade Beef Tacos Al Pastor Recipe + Grill Setup

  • Middle Eastern spices and Central Mexican street fare combine in our version of this flavorful taco. The recipe begins with the bold choice of rich, beef chuck roast. A charcoal kettle grill and 10 to12 inch skewers mimic the vertical rotisserie of traditional al pastor.

    INGREDIENTS:
    2 1/2 pounds Certified Angus Beef ® chuck roast
    6 dried guajillo peppers
    3/4 cup pineapple juice
    1/2 cup orange juice
    1/4 cup cider vinegar
    6 cloves garlic
    2 tablespoons achiote powder (also known as annatto)
    1 tablespoon coarse kosher salt
    2 teaspoons black pepper
    2 teaspoons cinnamon
    2 teaspoons cumin
    2 teaspoons dried oregano
    1 whole ripe pineapple
    2 cups pico de gallo
    16 small corn tortillas
    2 cups fresh cilantro leaves, stems removed

    Im from Mexico. Although tacos al pastor are made of pork, traditionally, this variant looks amazing. Kitchen has no rules!!!!

    Big thumbs up for this recipe. It’s a dish I’ve eaten but had no idea how to make it. And the fact that it uses chuck roast is awesome. I see chuck roasts in the store and think the only thing to use it for is a roast with potatoes and carrots. (I ate enough bland Sunday roasts growing up that it’s something I have no interest in ever making.). I will take your construction technique and improvise when I make this. I’m sure my Tower of Pisa al Pastor will fall a time or two.

    no pork? alpastor is usually spicy pork. hats just shredded beef with alpastor marinated.

    I always thought Al Pastor was pork and Carne Asada was beef, recipe still looks good but might use sliced pork shoulder instead

    Y’all… some people literally cannot eat pork for religious reasons or allergies. I’m allergic to pork and it SUCKS. That’s why I gotta use beef, even if it’s not typical

    Tacos al pastor are made from pork and about 8 ingredients.. what you made is roast beef with pineapple.
    Probably some kind of Taco Bell stuff with pineapple.
    Next time add a banana
