In my country Belize, this looks like our coconut tart in terms of shape and the filling is like our coconut crust / empanada/ patty filling. With our filling we melt the brown sugar to a complete liquid then add the grated coconut and stir quickly then add our spices( nutmeg, cinnamon, all spice etc..) With a little water and lime juice to stop sugar from crystalizing. We cook it a little then we put it in the same dough but with a patty shape and bake. We called it " coconut crust". It seems all the carribbean countries has similar foods just with different names. Slaves ancestorship at play throughout this region!
