Turn the brake levers to the moment of easy fixation, not as in the video. The choice is yours, a handle that will shift or a broken brake handle when you fall.

Clickbate nonsense to waste money on torque wrench when for decades cyclist still use regular allen keys. Torque wrenches are for people with OCD condition like Sickbiker. Creaking bolts has nothing to do with torque settings, more to do with dry threads on the bolts and no grease. Still Sickbiker has to keep putting out content for RUclips to keep his channels. Unless you can pick up torque wrench kit for the price of Allen keys, why bother with the added expense. Its a matter of choice.....
