    ingredients
    boiled Basmati rice - 259 to 300 gms
    eggs - 4
    garlic finely chopped - 5 - 6 cloves
    spring onion / scallions - 3
    carrot diced fine - 1/2 cup
    beans finely chopped - 1/2 cup
    salt to taste
    black or white pepper powder - 1 tsp
    soy sauce - 1 tsp
    oil
    preparation:
    1. cook the rice till it's 90% done.
    2.strain and spread the rice on a plate to cool.
    3. finely chop carrots, beans and garlic cloves.
    4. separate spring onion greens from the white.
    5. now fine chop both separately and set them aside.
    Method:
    - take a big kadai or wok & heat 2 Tbsp of oil. now break 4 eggs side by side and sprinkle salt and pepper. Also sprinkle some of the spring onion greens/ scallions.
    - now gently fold & scramble the eggs lightly.
    - remove the eggs onto a plate & set aside.
    - in same kadai add one Tbsp of oil & heat.
    -Add white portion of the spring onions and sauté for a minute. Now add chopped garlic & sauté.
    - add the carrots, saute for a minute and then add beans. continue to mix & saute for a minute or two.
    - add in the Rice , salt and black pepper mix it well.
    - add the soy sauce and mix it.
    - lastly add the scrambled eggs and saute for a minute.
    - remove & serve hot.
