    Thank you for your question, Tessa. The bottom pie crust is brushed with an egg which will prevent it from getting soggy. Also, the flour mixed in with the peaches will soak up and thicken up the juice. Enjoy!

    Thank you for your question. If you don't have fresh peaches on hand, it's better to use frozen rather then canned. Because canned peaches are already cooked, they will turn too mushy in the pie.

    dont throw away those strips of extra pie dough...just coat with a bit of milk then sprinkle on cinnamon-sugar and bake them on a little pie plate for a few minutes,,,delicious cookies. I sometimes freeze the dough strips til I have enough to make a big batch.

      @@asanthabandara2615 Youre very welcome. It's nice tofind ways not to waist a thing if we don't have to. Here's a tip I have been doing for a couple of years now. Actually might be a life saver if we ever get into a SHTF situation and need more calories to survive. But for now it makes the most delicious soup in a very short time. Since I dont make gravy every time I roast or bake chicken I make sure to save every drop of the fond and drippings and freeze or refrigerate them. I start my delicious broth for soup by cooking up the saved fond and drippings with water and a few aromatic veggies that will cook for a long time...those are not the veggies you will eat in the soup...they are just big hunks of stuff that mostly will get mushy...but the carrot will be fine. and then proceed for regular chicken soup with carrots 7 Celery and some orzo or other starch. I just used a restaurant large pot and made some for 5 families and they all raved. NOTE...cook your orzo or other starch separately and just put a little button on them and hold them til the end.

    This recipe was really delicious! My only tweak would be to bake the bottom crust first before adding the filling. Without that the bottom is very doughy.

    Made one from Red Indian Peaches, and then one from the tree that is grafted from Cling Peaches; Nectarine,and of course the last graff was the Red Indian Peach. The
    Tree grown of three varieties was most outstanding to say the least.
    Does any one want seeds from these trees, or a seedling? After making peach butter and pies I also saved fifteen seedlings from the two trees. Last year I gave friends and neighbors twelve trees plus the others were left out for the taking. ( free )

      Hi, Harvey Hernandez - You do not have to boil canned peaches before using them in this recipe. Simply drain the juice or syrup from the peaches (put the peaches into a sieve placed in the sink) and then toss the peaches gently with the flour, sugar, cinnamon, nutmeg, and salt mixture.       If you're still interested I have a recipe for old fashioned pie crust.
      12 oz/350 grams of plain flour
      5 1/2 oz/150 grams of lard or butter
      2 tbs sugar
      1/2 tsp salt.
      Sift flour into bowl and add salt, mix with fork.Cut the fat into cubes add to flour and rub together til it looks like bread crumbs. Mix in the sugar and add 6-7 tbs of cold water and mix with a fork, press into a ball, wrap in clingfilm and chill in the fridge for 30 mins.

    How disappointing......old fashioned pie does not mean using store bought pie dough!! It should be called an old fashioned peach pie with a modern twist. I guess it would be ok if one was using canned(yuck)peaches. Of course this is just my opinion, and not meant to offend anyone.
