Yep Gin Carve is the wing... you should try out the Falcon 2 bud. It's 85% the handling of the original Carve (haven't flown the 2 yet) but all the speed you could want. Granted it only goes to a 20 which is big for you but it's good! Maybe they can make you a custom 16m or 18m lol
How does that wing bleed off the energy so well without porposing right after a wingover? It looks like you can go from a wingover to straight and level flying without having to turn to bleed off energy. Might just be your skill though.
Trims just a little out, letting the trims out on basically any wing makes it roll faster at the expense of a longer recovery arc and less lift as you go over the top, so i prefer them almost in.

When you are doing these maneuvers are you generally trimmed in or out? How much does that affect things?
