    Wait! I’m to marinate in a brine but make sure the chicken is dry before flouring? So pull it out of the marinade-pat it dry-then fry?

    No chef is doing room temperature chicken at a restaurant. And no fried chicken joint is doing that either. What sort of shit advice is this? You're going to send people to the hospital.

    Room temperature is fine. Not cold. Air fryer is best, follow the instructions..
