Well normally or the most common household here in Spain do not serve callos with paella, bec. Both are heavy dishes on their own, it depends on the callos, if its callos madrileña, then it originated from Madrid (normally with garbanzos, but without tomato sauce) ...and the other one which I prefer is the Callos Asturiana which originated in the north of Spain (Asturias) thinly sliced.. normally without the spanish chorizo , and Callos here is served with patatas fritas or fried potatoes ... and a bit of chili oil on the side .. I think filipino callos is a bit different from the authentic one...maybe more suitable for the pinoy's taste...

Its a FILIPINO TRADITION in a SPANISH HOUSEHOLD. Just like Kaldereta Adobo Sinigang are all heavy yet we eat them all together. Hahahaha to each his own. Thanks for the info and input. God bless.

You should visit Oviedo (Asturias) when you visit Spain... they have the best (traditional) gastronomy!! I'm a bit intimidated with the tripe. Is there anything you place in the pot (where you boil the tripe?) or just place the tripe and water in the pressure cooker and boil away?

This is pretty cool. I have always wanted to cook this. I have seen in Puerto Rican and Dominican Republic restaurants and eaten as soup. Looks yummy.

Tong Duldulao I clean it before and aftwr i cook it in the pressure cooker. just trim out all the excess fats. Wash well. ❤️
