2 cups water
1-1/2 cups brown sugar
3 cups coconut milk
½ tsp salt

BIBINGKANG KANIN
3 cups coconut milk
1-½ cups glutinous rice, washed and soaked in water for 2 hours
1 cup brown sugar
½ tsp salt
banana leaves (cleaned and passed through open flame)
Topping
1 cup coconut cream
½ cup brown sugar
¼ tsp salt
SUMAN
2 cups glutinous rice, soaked in water for 2 hours
½ tsp salt
2 cups coconut milk
1 cup sugar

My lola from Laguna made the best puto pao. I honestly cannot find anything that is at par. My great grand mother here somewhere in NCR was directing her staff how to prepare the kakanin while we wait under the great mango tree to be fed. My mother-in-law makes the best suman sa lihiya and suman palaspas. When I miss those women in my life, I go to Batangas and buy some of the best kakanin that I can find in the public markets. Malagkit kakanin you know is eaten in provinces at weddings so the couple will stick together for years. I love your content specially the ones that bring good memories.

You can try this ingredients for another version of bibingkang kanin para white ang kanin at brown ang toppings. Same process lang ng pag gawa.
Isaing ang malagkit na ang gamit na sabaw ay 2nd piga na gata. Lagyan ng konting asin. Be sure na ang sabaw ay tama lang na half cook ang malagkit. Habang nagsasaing gawin na ang toppings.
Oh Man! My fave among the three is the Biko. It is simple but very delicious. For suman, I like the pinipig version. It's green but sweet and no need for sugar. But yeah, nag kanin ka na, then dessert mo kanin ulit? Unli carbs and sugar Hahaha! Still love kakanin though!

No ginger? Weird. Is that how they're traditionally made in Tagalog regions? In Visayan regions and Mindanao, kakanin like biko and rice suman almost always include ginger.
My favorite type of suman is the one which uses ginger and a minimal amount of sugar. It's the one which pairs perfectly with ripe mangoes.
Was looking for this comment! Our way of cooking biko is also very different. We steam the sticky rice first until it's half cooked then make the latik with calamansi juice and rind. We then mix them together until they are incorporated well and then continue to cook it. This results to a more firm biko where you can still see the grains and a bit of tutong na biko (best part).
How much is a "cup"? Because.... I don't have a cup like you, and so I don't know how much I need to cook it. Thank you....
