I really hate cottage cheese. I have tried to eat it multiple times and gave up but you make me willing to try again in these recipes 🩷
Maybe you’ll like it the way my husband eats it, which is by first freezing it and then thawing it ahead of time when you want to eat it. Its texture changes, and that’s what bothers a lot of people. It’s worth trying! I also think it’s better with a pinch of Himalayan salt and Cayenne pepper or white pepper

I loved these ideas! I’ve made cottage cheese ice cream before, but I mostly enjoy making a healthy cottage cheese bar with PB2 powdered peanut butter, and I top it with dark chocolate, which makes the perfect combo for a healthy treat! I don’t use it as bruschetta because I follow the keto diet, but I make omelet toppings with cottage cheese and then vary the filling (tomato and chives, or cucumber and dill, or sautéed peppers with onion, or Brussels sprouts sautéed with garlic, or mung beans with white cabbage and sautéed onion, among other combinations). I also make panna cotta with Greek yogurt or Skyr or cottage cheese, depending on what I have at home. I love your idea of creating recipes around a main ingredient! My suggestion, if I may, would be raspberries , or coconut or hazelnuts! Keep up your great mood and beautiful smile! You’re fantastic!

In Russia we use a lot of cottage cheese - it is called quark and it is slightly different than American cottage cheese - and we make a lot of tasty dishes with it like syrniki! Those are cottage cheese thick pancakes. You can make them with any kind of flower (I use 1 whole egg, a spoonful of sugar and 3 tbs of semolina for 500 g of quark and some wheat flower to form a thick little cake). I use greek yougurt and berries for toppings, but it is more traditional to use sour cream and jam or honey of course if you are a child or someone who can afford those calories =)

I make a Joseph's pita pizza. I lightly spray both sides of the pita with avocado oil. Ricotta for the sauce. Cover in spinach. 4 ounces of diced chicken breast. 1 serving of sundried tomatoes. Topped with low-moisture mozzarella. Italian seasoning, of course. Bake for 15 minutes at 350°F. It is full of protein.

We love making homemade pizza and my favourite toppings are green olives, hot peppers and pepperoni (usually turkey pepperoni when I can find it!)

@@MamaTenny Hi Nancy, yes, you can buy it at Bulk Barn, or Bob's Red Mill has it as well. It's dry crumbles, and when you add water or broth to it, and it looks like ground beef. I'm looking at the back of the package of Bob's Red Mill TVP for the nutrition info. 1/4 cup of dry TVP has 90 calories, 0 fat, 5 grams of fibre, and 13 grams of protein. I've tasted TVP lasagne and it was really good. I made tacos. TVP has no flavour, so when I prepared it for tacos, I used beef broth to rehydrate it, and then used Taco seasoning from the package. It turned out great! I'd love to learn more recipes for it though.

I was that "weird" kid growing up that loved cottage cheese! 😂 I still do! I could and often do eat it every day. I actually like it with vinegar or something sour like pickled beets, or even with some nutritional yeast on it. Yum!
