Manila sunset is the traditional bibingka, like what you’d get during simbang gabi in pinas. It’s hard to replicate it without access to real galapong. Bingka ambon (martabak too) is the closest similar recipe to Manila sunset bibingka. For years I tried to copy theirs and made my own galapong. Yes, yeast is the best way to get the honeycomb center. I adjusted another (rare) bibingka with yeast recipe, used mamon molds and used more egg yolks. It came out exactly like Manila sunset. Also, valerio’s in sd (Chula Vista) has good similar honey comb bibingka! Great recipe and thanks for sharing! Time to get that pancit malabon recipe or replicate it 😂
Where were you 5 years ago!! We moved to Hawaii and spent a year trying to copy manila sunsets bibingka. I even went as far as asking my husband's friend whose family owns Manila sunset. I cant wait to try sans the cheese. Something about the cheese they use turns my stomach. I have noticed it tastes very similar to parm cheese.
I really love Manila Sunset Grille's bibingka and have been trying to make it cuz we don't have it here on the east coast! At least not one that's comparable to Manila Sunset's. Thank you for sharing this recipe!
