There has got to be a way to get one of these things and just modify them to have the latest emulators and cores, getting the latest RetroArch updates and cores/emulators would resolve alot of the issues these sticks have, these sticks run really outdated software....

You can but like the one I have there's only 256mb of ram and it won't run a whole lot.
But there is a Super Console X Stick with 2 GB of RAM tested by Retro Game Corps
Y7 seems like a better option than these two.
I had the Y6 and it was horrible
