Will the cooking time be the same with flour tortillas? I tried with the corn tortillas for the family, but didn’t like it much.

Is there a canned/jarred sauce instead? Like maybe red enchilada sauce?

Yes you can try with the store bought Enchilada sauce too but homemade sauce is really easy to make and tastes way better.
