You do an excellent job going over the wiring diagram. I hope a lot of new people getting into this field run across your channel anyone that I know I will recommend them. I helped a guy out one time getting into this field, he bought me lunch once a week for a month. And it only took me 15 minutes but was career changing for him because he wanted to quit.
First time seeing these types of ovens I've seen several videos so far I like how you do your videos, thank you very much. Those are teaching me a few things about these Combi ovens, haven't come across any but if I do, I'll know something. I have one observation though on the boiling of the chicken, and I think I understand what they are saying. It's probably because all the trays are filling up with water and the bottom of the chicken is being boiled in tray, it plus any of the chickens on that side next to the fan is probably rinsing the seasoning off too. I like the temp bypass to keep some functionality. Please keep making these great videos.

Learning schematics is the biggest hurdle I’m finding with new techs and unfortunately few put in the time to learn them.
