hopefully i understood correctly, but for 8-bit (not 16-bit like genesis) versions: find the right vsts or plugins for that type of sound. good starting points are ones like NES VST and Magical8bitplug if you don't use a digital audio workstation, download something like famitracker (it's a bit more complex though) and learn to use the program generally, don't use too many sounds if you want to sound more real. most 8-bit songs use 2 square waves channel, a triangle wave channel, and a noise/dpcm channel. if that all is hard to understand, youtube also exists. i'm sure there are several thousand videos explaining these kinda things much better than i can. for remixes: it's hard to give any tips because each remixer has their own style, including me. i suggest starting by "recreating" a song you like and making your own changes to it as you see fit. change the melody, make different drum patterns, maybe change everything - your choice and if you're just starting out in music production, i suggest you learn your footing in one particular program first by... looking up tutorials i use FL Studio, and if you wanna go for that, a channel called In The Mix has a lot of good tutorials regarding it. this will take time to get good at, so be prepared for that as well
