I'm also Canadian (from Montreal) and I had exactly the same experience in Guatemala City, tried hot dogs with a whole lot of stuff in it.
*My experience was in summer 1981 !*
I remember it all very well, Diana and Prince Charles where on TV getting married.
Then I went to Coba in the northern part of the country then went on an aventure in Honduras the next months.
How time flies. 41 years ago !

The curious thing about Zone 4 is that it does not have streets and avenues, since it was designed with the french pattern of rues and vies, so it goes in diagonal patterns instead of a grid (That’s why you find rutas and vías, instead of calles and avenidas.

So this is what a SHUKO is? Yes, everything gets better with avocado on it, kinda similar to a Tecolota, which is a Torta(french baguette bread)filled with crispy chilaquiles,well your version with the Doritos I mean. But what's this? For many a year the Quetzal maintained its value on par with the U.S.Dollar, 1 Quetzal = 1 U.S.Dollar?!! This means inflation has also arrived to our beautiful Quautemalan neighbor.🙁 Anyways as always 5 star video ya have here Dan, 👍 and greetings👋 from central Mexico! 🤠

I literally studied on the Highschool right next to the street you were on, Liceo Guatemala, Shucos are always believed to have been originated because of Liceo Guatemala since all the students would leave to go eat at the Shuco stands, if i'm not mistaken El Chino Shucos are the original ones.

I’m glad you like SHUCOS is so good and most of the people like it, I’m from Guatemala and live in California since a long time ago. But you know what never eat shucos. I don’t think I’m going to eat it, I really like Guatemalan food like carne guisada, pepian de pollo, ensalada rusa, churrascos de la Estancia is like a beef steak. There is a lot of topical plates. Have a nice trip enjoying.
Try some guatemalan typical food , i recommend you the pepian or the "caldo de res" you can find these delicious plates in EL MERCADO CENTRAL.
The best Guatemalan dish is tapado from izabal!!!

Honestly i think some of the best of the area are shuco station and shucos del chino, although that just might be me being biased since I studied at the school that is in that area

Shuko doesn't mean that it is dirty, is that you get dirty when you eat it. We do use the word as a mom would tell the child not to touch something because it is "shuko."
