For the main course I would recommend Aloo Gobi, Palak Paneer, Kurkuri Bhendi (Okra), Bhaigan ka bharta (Eggplant dish), Daal Tadka (Lentil Soup) with Jeera rice and Roti. To make it all palatable in drinks I would recommend Mango Lassi or Mastani or Chhach or sol kadhi.
All of the above dishes are vegetarian, spices make the flavours not the meat these all taste good. These are the dishes prepared in everyone's home, nothing mentioned above is a restaurant dish. Authentic Indian food.

I am Greek, but i think Türkiye has better food than ours, but Greek food is delicious too.
The regions of the world that have the most spices (warmer regions located close or relatively close to the equator that grow spices year round) have the tastiest foods. Funny how these little charts always leave out the Caribbean, S. America, Africa, etc. Your European foods could never. You typically cook with salt (and maybe a pinch of black pepper) because your ancestors did not have access to lots of spices when their cuisines developed.
