I honestly don't understand when they wrote any of these characters to stop training. They are martial artists that's kind of the entire drive behind their existence. They wouldn't let a power gap discourage them from trying to train to grow more powerful. If anything it would motivate them to train and find methods to close the gap like Vegeta. Sure they are Saiyans but their human companions also weren't all Bulma they were warriors just like the Saiyans. I feel like Toriyama didn't want to invest the time into the humans after Frieza definitely after cell. Sure, but it's not inherently a bad writing choice to have some of your characters quit fighting and move onto something else. It's also ok to let the franchise actually have an endpoint that includes less alien invasions for the characters to deal with.
