Hi Benjamin. Please do not order dosa through food apps. The key is to eat it immediately after it is out of the tawa. Once it gets cold, it is not good to eat. Either make at home or eat at a restaurant.

Dosas came from Udupi region of Karnataka. Udupi people are mainly hoteliers spread all over India. They added the potato palya inside Dosa which became Masala Dosa, which was introduced mainly after watching people in Pune and Mumbai eat potato as diet.
Bangalore has the best dosas! Crispy on outside , fluffy on the Inside.

The perticular dosa of Crispy variety ... is Originated in UDUPI not Tamilnadu ...
But Fluffy Dosas are Native to Tamil Nadu..

*...Dosa is older than karnataka & kannada language. Karnataka & hale-kannada language never even existed on planet earth 2000 years ago. Stop blabbering... Though Dosa originated during the early sangam period, it belongs to every Indian and every soul on planet earth. ETHIOPEAN "INJERA" & RUSSIAN "BLIN" @ "BLINCHIKI" are distant cousins of south Indian Dosa.*
*Dosa, from the Tamil words Thoi + Sei = "Dip & Do" deformed to Thosai - Dosai - Dosa.*
*Sambar - from the Tamil word Champaram = spiced condiment.*
*Chutney from the Tamil word Chuttunu meaning immediately, faster, freshly made, bistro.*
Also Idli from the Tamil words Ittakali @ ittu + avi meaning put & steam. Also the hale-kannada word Iddelige.
