Hi Benjamin. Please do not order dosa through food apps. The key is to eat it immediately after it is out of the tawa. Once it gets cold, it is not good to eat. Either make at home or eat at a restaurant.

Podi dosa or onion podi dosa my favourite, when I travel outside TN, being foodie I enjoy all that's available but by the time I am back to chennai I start craving for nice onion podi dosa with nice coconut chutney and sambar
if you visit chennai , try having dosa at Eating Circles .. they have variety of dosa .. little different from tamil nadu dosas. they do sell rava masala dosa , but you should try podi dosa ... it would be a challenging task to tackle the spicy podi dosa

If you want to know how the first ever dosa was made, go to azhagarmalai temple, madurai. There they are offering it as prasad. The original dosa is actually a fried in ghee or oil. And it will be very thick.
Try the madurai Kari dosa. Sangam literature evidences date back to 1000 ad. Ilan thosai is the recipe I think mentioned there. Its one of the. Toughtes recipes to cook and rare to find. Thin as a hand kerchief soft as a pillow. Usually tamil style dosas are more spongy and thick than the thin ones commonly seen in Karnataka regions

Masala dosa is pretty good. Has to be fresh as it gets soggy pretty quickly especially in a pakker. I am not sure I have ever had a healthy dosa as all seem to leave my fingers pretty greasy. They are really good in my opinion, but usually 1 is enough.
Most South Indian foods (Dosa, Idli, Vada, Appam, Uttappam, etc) have to be eaten when they are fresh and still hot. So, most of them are NOT good carry-out foods. On the contrary, North Indian breads (Naan, Paratha, Chappati etc) work well for carry-out as well as dine-in.

As you pointed out in the video, its indeed very healthy! Udipi is not pronounced you-dipi, its more like oo-dipi. lastly, dosas, especially something like rava dosa just doesnt do justice after take out. i was impressed that you thought about adding the potato masala to the rava dosa! you were spot-on since its a popular thing. good job guessing it! I'm not great fan of new variants of dose. But Rava dose looks soggy. We prepare much crispy and yummy ones at home. Equal quantity of rice flour, wheat flour and semolina with little chopped onion, cumin, turmeric powder. 😋. I think all dose looks soggy. It has to be eaten fresh.

In Jaffna we use urudu dhal and steamed all purpose flour. Different from using Rice.
Ghee is much healthier than butter. It has fats but healthy fats. It is also good for the bones and good for skin as well.

you should really try ravva dosa. I eat at most 3 normal dosas but when it comes to ravva dosas my stomach can acomodate 10 and more
Ghee is not bad, it's trigyceroid,absorbed easily in body,not like cholestrol
