Sheik can't needle camp you forever, and she 100% has to approach at some point. Since peach lacks anything close to a good out of shield option, you don't want to get scared and shield. Stay mobile and mix up your movement so that the sheik has to predict where you are in order to hit you. Peach has enough defensive options to overcome sheik's frame data. Holding turnips helps as well. You have to remember that all of sheiks tilts are extremely unsafe on shield and can be punished. Also, sheik has to win neutral so many times in order to keep up with Peach's damage output, so you have to be patient. So it's OK if you feel like you are in disadvantage the entire time, because one neutral win for Peach can bring the game back, and sheik dies very early.
If a sheik starts needle camping, generally it's a good thing. Sure they get needle that combos into stuff really well but it also allows you to pull turnip which is a great trade imo given how aggressive and relentless sheik can be.
@@gamingstation0608 You cannot shield during initial dash. It simply isn't possible, however you can cancel your initial dash with a jump then jcff back to the ground and shield.

I found that learning how to utilize JCFF effectivly makes it a whole lot easier to dodge and avoid both incoming projectiles and attacks

Actually there's a way to shield quickly while dashing which is to hold the direction and press shield

@@smackastan5697 Yes you can cancel it if you hold the direction while pressing shield, you just don't have to stop
The goal is to not press shield after letting go so the dash finishing animation doesn't play
