I'm a new subscriber. As a retiree, I am trying to do some baking to keep busy. My crust comes out perfect, but my filling is always dry. I suspected that maybe I should use bread crumbs or potato to make it moist. I just decided to check youtube and here you are. I am definitely trying your recipe tomorrow. Thank you for sharing.

My filling (ground turkey as a substitute for beef) is so delicious and noone would know its not beef😋) is so good but my pastry needs help😫 I personally try to not use too much bread crumbs or potato as a binder (actually I dont use anything) for the reason- that it makes the filling dry. Also include a spice called ‘Allspice’ in berry form and ground up, or powder form 1 teaspoon. Btw congrats on retirement! I also recently retired after 38 years as a teacher. If you wouldn’t mind could you share your dough recipe?

@@ShyaneAsherx I would just use butter or shortening(N.b I've never used shortening, but next time I will give it a try if I can get it here in the UK). Just use the amount of butter you would use for the Lard. Hope that helps
The dough process in this video seems close to how it's done in the Jamaican restaurants. With the exception here, the butter and lard/shortening should have been stretched and spreaded on each fold. The dough also needed to be slightly thinner. I know that's not what you were aiming for, but thought I would just point that out. I'll definitely be trying this.

How long and temp in the oven
15 - 20 mins at 200°c, I would check them in between time as it depends on how thick or thin you make your crust.
Sweet pepper or hot pepper
Both, I use scorch bonnet pepper and green sweet pepper (you can use whatever color sweet pepper you want).
