  • This Oven-roasted Filipino Pork Barbecue can be made any season and tastes as delicious as the ones cooked on the grill. The result is almost the same as if you did it outside. Try it and enjoy!
    Oven-roasted Filipino Pork Barbecue
    Ingredients
    Marinade Sauce (enough for 2.kgs of meat)
    1.3 kg Pork belly, thinly slice about 1/2 inch thick
    1 cup soy sauce
    1/4 cup kalamansi extract
    1/4 cup pineapple juice
    1/4 cup brown sugar
    1 tbsp garlic powder
    1 tbsp onion powder
    1 tsp ground black pepper
    1 cup banana ketchup
    2 tbsp vinegar
    1/4 cup Sprite lemon-lime soda
    Procedures
    Add all the marinade ingredients in a large bowl or a pan and mix very well. Add pork and massage pushing to the marinade to coat. Marinate the meat in the refrigerator for at least 4 hours or overnight.
    Once ready, scoop 1 to 2 cups barbecue sauce marinade and simmer for at least 5 minutes. You will use this for basting.
    Place about 2-3 pork slices on top of the greased rack and arrange side by side. Brush each pork with the sauce.
    Bake in a pre heated oven at 200°C for 30 minutes. Remove rack from the oven and flip each pork. Brush this side with the sauce.
    Bake again for another 20-30 minutes. Remove from the oven again and flip. Baste with the marinade sauce. You can broil for about 3-5 minutes on each side or until desired color is achieved.
    Watch carefully as oven temperatures vary. Repeat the process with the remaining pork batches.
    Transfer to a plate and serve with spiced vinegar. Share and enjoy!
    Spicy vinegar
    1 tbsp water
    ½ cup vinegar
    small cucumber, chopped
    1 onion, minced
    2 cloves garlic, minced
    1 tsp sugar
    1 finger pepper, chopped
    red chilli or chili flakes (optional)
    ½ tsp salt
    ½ tsp ground black pepper
    To make spiced vinegar, combine water, vinegar, cucumber, garlic, onion, sugar, finger pepper, red chilli or chili flakes (optional) and season with salt and ground black pepper.
    *A broiler is a section of your oven - usually located near the top - that provides high, direct heat much like a grill. Broiling places food close to your oven's heating element so that it can quickly cook, brown, char or caramelize. This can give food more complex flavors or help you achieve certain textures.
    *Basting and flipping every 15-20 minutes for juicy pork.
    *The sauce is good for 2kgs of meat, depending on how “saucy” you want it.
    *Line your baking pan/rack with heavy-duty foil, or parchment/baking paper. The heavy-duty foil makes the clean-up process significantly easier.
    *Using a fork, poke some holes on the aluminum foil covered rack to easily drip the sauce to the pan.
