I just realized that the track layout used for the Panoz LMP1 Roadster was recycled into Ford Racing 2, made by the same developer! In that game it appears in the Taurus stock car events iirc
I think the only car I can think of that you've missed, is the Lola B09/86 that appeared in FM3-4-7. Not to be confused with the Lola B09/60 LMP1 car that did appeared in the video, as the B09/86 was an LMP2 car. Fantastic video regardless, this had to take ages to make.

Group C cars are my favourite type of Le Mans prototypes, all mechanical grip no computers just you and machine, you really need big balls to drive these cars. My favourite Le Mans prototype is the Mazda 787B.

So, the Oreca FLM09... It's presence in FM2023 is nice, but it's livery is what baffles me. That #55 is a Level 5 Motorsports car, or used to be, anyway. The devs kept the base livery and sponsors, yet wiped any mention of Level 5 Motorsports and it's drivers off the car. Why, you may ask? Driver, and team owner, Scott Tucker was busted by the feds in 2018 for some big white collar crime stuff, and the devs more than likely A. didn't want to feature a guy currently sitting in federal prison and B. Level 5 Motorsports doesn't really exist anymore.
Some notes: 12:21 the RS Spyder Evo also appears in Real Racing 3 as well, same case with the Porsche 963 (I think it's mentioned already in the comments) 1:05:57 there are numerous 333 SPs featured in both versions of Test Drive Le Mans, but due to licensing, these cars ended up being named after their respective teams: In PSX, there are "JB Giesse" and "Pilot Pen Racing" while the PC version (the Eutechnyx one) adds "Doyle Risi Racing" and "Momo Motorsport" Ferraris. The Melbourne House versions instead have an off-brand-ish Pilot Pen Racing car and a JMB Competition car. 1:16:36 The livery on the PSX version replaces the "Coca Cola" logo with "Mobil 1" logo, most probably due to licensing. Never come across a real picture of the one with Mobil 1 logo so I guess it's only for the game. In addition, there are some cars missing: - 2003 Lister Storm LMP, only appears on Total Immersion Racing, debuts real life in 2003 competing in 14 races until 2006 with only 1 won. Not really a decent performer since it'd mostly run to troubles, and yet it's got almost perfect stats in the game! - 1998 Debora LMP296, only appears on Eutechnyx's PC version of Test Drive Le Mans with the real car competed in the 1998 Le Mans (retired). Only accessible by entering the name "DEBORALM" or "DEBORACING", and weirdly enough the only LMP2 car amongst the LMP1 roster in the game. Debora would reappear in the Melbourne House version with a new car... - 2000 Debora LMP BMW, appear in the aforementioned version of the game, raced in 2000 Le Mans and retired. On a personal note, I find it funny that the NISMO GT-R LM is quite a meta LMP1 car in RR3 despite being a meme in real life.
Speaking of the Nismo GT-R LM LMP1, I tested it in RR3 and it's quite the opposite of what you thought. A meme IRL is also a meme in-game. Sure it as the speed and accel advantage, but even a front-wheel drivetrain won't save the Nismo from losing control on even the fastest of corners.
Unpopular comment, but let's see how many modders are going to take time to put all cars from this video to Assetto Corsa (excludes ones already exist)
