GTA San andreas had so many stunts you could perform with the NRG-500 especially if you were tapping the stoppie button which allowed it to go way faster than driving normal or wheelie
I wouldn't worry about the earlier games being "choppy" if I were you, these games were designed for 30fps and the animations were created for that frame cap so they actually look their best/most natural when at 30fps. Great video nonetheless :)
I know im a year late. But 😂 in san andreas if your bike is facing perfectly north or south. Its possible to do an actual perfect backflip or frontflip.

You could control cars and bikes in midair in the past. I can't speak for GTA 3, Vice City or 4 as I haven't played those enough but in San Andreas (which I still play to this day) the level of control in midair is pretty much even with GTA 5
Even back in GTA 2, you still have mid-air control over the vehicle. It offers a basic stunting mechanic that boils down to jumping X meters with a speed above Y. And the stunt jumps are spread across the 3 different maps so there is quite a bit of variety.
Hey buddy im glad that you tried gta san stunting but you can control the car in mid air in san andreas by not pressing WASD and using the arrows. You can do pretty cool stunts by using this. Try more of these

You really missed something with not trying stunting in GTA 2. It's basic but the game has stunts all over the 3 cities and a couple of bonus maps are even dedicated to stunting
