Man this reminds me of old and fun glitches like the tow truck and gate launch glitch. I also remember watching a video of these guys messing with an upside down ambulance with a bulldozer and when they touch or climb the front tires they'd launch into the air
So, it seems more to do with bailing as your bike is on the ground, right before hitting the stunt itself, so that you do the bail animation and the animation ends while you're over another solid surface, but the surface has to be close enough that the game doesn't start a ragdoll. That's how it seems to work.
I remember when GTA V came out on pc in the year 2015 I was having a intel dual core processor and a nvidia gt 750ti which barely got me 40 fps but when compared to today's time that fps was gold. now after a decade of this game's release I feel nostalgic and want that time back. ;-;

You can still air grab on xbox one in 2023. All you need to do is bail off your bike in mid air and spam the B button and RT button the seccond you bail.
