    I just did pork belly as a brisket, and scored the fat cap to make sure it didn't shrink during the cook. But the down side of doing pork belly as a brisket is that there isn't as much smoke flavor than if you do burnt ends.

      Yup... she is a good kid. Wife and the other 3 are at the amusement park and she and I were just hanging out... why not ribeye for lunch...
      I have been eying that slab of meat for a month or two, now I have something to do with it... other than trying to make bacon..

    I haven't cooked a pork belly yet so just last week I was looking for how to smoke bacon...found your video 😂. Now I'm conflicted on which recipe to try first, they all look amazing.

    I have done pork belly like a brisket a few times, also burnt ends. You cant beat it. I also get the skin and crispen it up to make crackle. No matter how good the pork belly is, you need the crackle to make it complete.

    Wow, not sure I could choose without taste testing myself. Was that a burl cutting board you had under the 160 degree pork? How big is your backyard?

      I guess you're going to have to do this test yourself, Keith! That was burled wood - but it was a serving platter I found at the grocery store so I can't give you a link sorry. And I'm very fortunate to have a nice size yard!

    Woof woof just got home from Costco with a pork belly and now will cook it for Saturdays dinner.
    Only question left for my great brisket pork belly is beer, mixed drinks or wine with this cook

      Definitely beer. That's too long of a cook for mixed drinks (you'll get smashed and fall asleep and overcook it. or maybe that's just me?) - and wine hangovers suck!

      I think I need to do a video on making bacon, and take a bunch of it and make burnt ends for another video. Then I'll call my cardiologist! :-)

      @@BehindTheFoodTV Bacon is super easy to make. However I made bacon strips like a burnt ends, almost rib shaped. While good, It was neither as good as an unbrined belly or pork ribs. The bacon making process takes too much moisure out for me. Again a good bite but not fall down screaming goodness of a porkbelly

    Dry it with paper towels score the skin and put lots of salt on the skin side then stick it in the fridge overnight. take off the salt and use some on the meat side and pepper. 350 on the bbq with it on some foil rolled up on the sides. Once its done. Take the fat drippings in the foil add some oil in a cast iron with it and fry the skin side and it turns into chicharon. super simple but the pork belly itself shines.

    I was just thinking about making bacon!! Great minds think alike! Al, this might be the summer for a BGE! I don’t have the coin for a KJ, so it’s more than likely a BGE.

      Hey Brian - when you add up what you need to buy for the BGE (stand, deflector, etc.) it actually costs almost exactly the same as a KJ. Pick the one you like the best - either way you're getting a great cooker.

      @@BehindTheFoodTV I have to look in person at both. My local ACE has the BGE with a sales guy that has 3 of them and has a lot of great info. I haven’t found/looked for a place with KJ’s on sale. The BGE website to me is better set up for browsing than KJ’s website. I’m also going to build a table for which ever cooker I get, so I don’t really need shelves on the outside or legs. I will keep you updated for sure as you are the driving force for my learning how to cook on one of these bad boys! Always great full for your videos and friendship!!!

    I always say Play with your food; you nailed all three. I like some BBQ sauce but staying away from sugars and carbs you really don`t need any, with the right seasoning it is a lot tastier. Great video.

      Except honey has 21 carbs per tablespoon. So not keto this time

      @@ricsbbq9999 That depends on your total carb intake for the day. If you're 50 carbs or less it's OK. I'm 20 or less, and eat once a day, so I can get away with it once in a while..

      A common misconception is that Keto requires zero carbs. That's not actually true - and this recipe is definitely one that has carbs but a manageable amount per serving.

      Yup. Honey still has carbs, but not as many. I added about 3 Tbsp which is about 50g of carbs total for over 3 lbs of pork belly - enough to feed 6-8 people - so about 7-8g of carbs per serving. Not bad at all!
