Here at 2:16 I just tried to match my camera angle while holding the attack to cut the tree. The "approaching camera" is a montage
And at 2:10 I used the /spawn entity playerbot feature with animations which you can read more here: wiki.vintagestory.at/index.php?title=Bot_System

Those are pre-made creative blocks, so not sure if you can craft them yet
