What do you like to put on your biscuits?
Um lets see, blackberry jam, strawberry jam, apple jelly, 🍎. You name it! Sometimes gravy! Thanks, Paula you're making me want to blow my diet! I wont do it though, Im strong........
Tomato gravy!
Strawberry jelly
Butter and honey.
Apple butter, honey, jam⭐
I don't have any family. It's just me so when I watch you all hanging around the kitchen, I feel like I'm part of the family enjoying family time. Thank you.
I have family but not like this but watching these makes me want to be there so bad, I love Paula!!
Ahhh, just wanted to tell you that I have family, and I am usually all alone to, I feel ya, that's a big part of why I do you tube, let my imagination go, anyway, know you have a friend 👍🙏❤️😎
When I was 10 I begged my mom for a cat. My neighbors cat had a litter. We took the orange tabby & named him pumpkin. He was a big boy like his dad but his tail wasn't as fluffy as your kitty. He lived to be almost 18 years old. He passed in 1989 & I still miss him.
I wish our pet friends could live forever
My Great Grandmother made biscuits for almost every meal. But when she was told by her doctor she could only have 1 biscuit per meal. So she did exactly what the doctor said only 1 biscuit a meal. But she Warned everybody that the 1 Big biscuit in the middle of the pan was HER's !! An from what I was told, She Meant It !!! :~)
🤣😆 that's brilliant
LOL! I love your Great Grandma!
Lol i dont blame her
Oh Miss Paula, I watched you for years and enjoyed every episode but I have to say these “quarantine and beyond” videos are hands down my favorite! I love how your sweet personality shines through every time we get to be with you. Please don’t ever change and please keep us in your daily life, just as we love you in ours. Thanks for sharing your beautiful home with us to. We all love you!❤️
Very well said!!! I agree 💯
Amen!
Ask a black person how ‘sweet’ she is
Next time greated the cold butter with a greater and it will mix in a lot easier and you don’t need a pastry cutter.
I was wondering when someone was going to mention about grating your butter. Great video.
My husband just restored my great grandmother's Hoosier cabinet ( she was from Pheba, MS) and the flour sifter still works. It now sits in my kitchen and I love looking at it because it reminds me of her! ❤️
wonderful lesson that a cook book could never teach.
Hello Marilou how are you doing today?
Even more than the cooking, I just love watching your videos because I feel like I'm spending time with a long-time friend.
What I would give to come sit and talk and eat and spend a weekend with you. My heart aches for my 'grandmother's ways'. She was my best friend and taught me everything I know about cooking. Thank you sweet Paula😘
Same here. Gran took sas from no one.
My grandmother & mother always pricked the biscuits with a fork 3 times. I continue this habit. Never made them without doing this, so I don't know if the texture would be different or not! Don't want my biscuits ruined!🤣 Thank you, Paula, for continuing to do these videos.
Paula, so nice to see from this video that you are in your “mode.” I am 69 years of age. I learned to cut dough the way you have done; with a knife and fork, and then with your fingers to play with the dough and get close to a “pea size “ texture. Just to say, you are in your mode…and I am in the mode to make butter milk biscuits the way I did so long ago…that helped me get “ in touch” with my food.
in addition, I was told that to have the oven on, place your baking pan in the oven with baking renderings (the biscuits. were to be dredged in the bacon renderings on both sides) and then baked. I loved your concentrated presence.
We were down in Tennessee about 10 years ago (we’re from Indiana) and my husband’s grandmother taught me how to make her homemade biscuits. They’re almost exactly the same except while I’m mixing and kneading the dough my cast iron is in the oven with bacon grease getting nice and hot. Then instead of rolling them out (she rolled hers but we prefer ours dropped) I use a spoon and drop them in the cast iron. My family enjoys the crispy tops that are on the biscuit and then brushed with melted butter!
Love Pumpkin the cat and homemade buttermilk biscuits!
grate your cold butter on a box grater. these look delicious!!
I thought about that too, but in comments I read the big cubes help the fluffiness.
@@sibkiss2009 interesting
Those biscuits look heavenly Paula. Also I just wanted to say that whenever I watch your videos, I always feel like I am right in the kitchen with you, sitting on the opposite side of the counter, watching you cook and bake. I really enjoy your videos - thank you!
Beautiful biscuit and a beautiful Lady Miss Paula!
I love Buttermilk Biscuits !!! My Mother also did the knuckle thing and so do I...I think it is a southern thing ...LOL !!!
The reason for pressing the top is to make the approximate the same height to cause them to bake evenly and not rise so high in the center is each biscuit. 😍
Enjoyed your video, my Mother made the best biscuits in the world, I think. She never used a recipe she just mixed them up patted them out a little & cut them. I try to make them like she did, but mine never taste like hers, think I will try this recipe. Seeing you make the biscuits brought back precious memories of my Mother making biscuits. Thanks for sharing.
My grandmother after cutting out her biscuits & putting them in the skillet, she poured just a little buttermilk into her hands, rubbed her hands together, and patted the top of all her biscuits right before she put them in the oven to bake. When they came right out of the oven she used a stick of butter leaving the paper on the bottom of the stick butter, peeling the paper off the top, and rubbed the butter right on her biscuits bottom then top! So good too!
I need to try your biscuit mix. I bet it's delicious.
Paula, thank you so much for sharing your home and recipes. I have been a huge fan for at least 25-30 years. My grandmother and I loved watching you and Emeril long before the fancy cameras and lights. We loved recreating some of your recipes together. My grandmother past about 10 yrs ago and watching you always brings me back to that happy place. Every Christmas morning for the last 15 or so years, we have your French Toast Casserole. My children start talking about it around this time every year. Love and Best dishes Paula❤️
I'm going to have to look for that one. 😃
I love homemade biscuits. Nothing like them
Family lore has it that my mother as a child (an only) went visiting with her mother and was sent out into the kitchen to play. Well, she made a “flour garden” with the flour in the Hoosier cabinet. Sifted it all out and made peaks & valleys and put her dolly in to play. This was in Alabama!
I went to Amazon and bought a blending fork it is the bomb!!
You put your butter in the freezer, then you use your GRATER to grate the butter in the flour then you don't need a pastry cutter.
A pastry cutter, cuts in the butter into flour, I did not say a biscuit cutter !!
County biscuits should be served with country gravy which you can entirely make while the biscuits are cooking..and pure cane ribbon syrup..and butter..of course.
My Momma Knight had a big wooden flour bowl & sifter she kept it in a bag in a kitchen drawer. She never put sugar in her biscuits or cornbread. She made a/b 20 buttermilk biscuits every day of her life unless she was very sick which wasn't very often. She made the best biscuits I've ever eat. Anyone was always Welcome to eat at her house She Always cooked breakfast & supper everyday. She' had fruit trees grape vines & made jellies jams & always had honey sorghum molasses & butter to eat with her biscuits & big skillet of sausage gravy & if she cooked country ham she had red eye gravy. & eggs. I eat breakfast with her 3-4 times a week. It was always ready at 6am. She always had big veggie gardens & had pecan trees & walnut trees n her big pretty yard. She made the most Delicious Pecan pies ❣️ I LOVE watching you cook Paula. You cook so much like my Grandmother & Aunt's & my Mother which they taught her to cook. Thank You for Sharing All your Delicious cooking with us❣️♥️♥️🥰😋
"Now dont be afraid of a biscuit..." that was so sweet.
Paula get you a blending fork, they're so much easier to work with than a pastry cutter. I think White Lily flower makes the best tasting biscuits.
I love guava paste and cheddar cheese on my biscuits. Though I use the kind you hit to open. You make it look easy and delicious. I might try making it again from scratch. Thank you Mrs. Paula. ♥️
Paula, now these videos are similar to your originals. LOVE the simple homemade recipes with just you by yourself. LOVE all your great recipes. God's blessings to all XO
I just want to say thank you for all the recipes you shared over the years.
Your biggest fan.....
Reminds me of watching my grandmas spoiling us with her love of sharing. The same things I was taught. Thank you.❤
Love that Paula let us into her home & see a day in the life. Only thing missing today was sausage gravy!
I love that to and my husband sometimes puts coffee in his gravy to it was so good
Me too! I watch every video and love that she’s back at my favorite house. Feels like home. 💗
I just got me a jar of apple butter.... those look amazing! so good to see you, Aunt Peggy❤Love you, and Paula!
I always struggled with biscuits until I saw an earlier YT video by Paula. She taught me how to make biscuits! Thank you Paula!
You need a blending fork! Hands are the best tools God gave us!
Absolutely
My husband and I went to your family kitchen in Pigeon Forge and fell in LOVE with your cheese biscuits. They taste even better than Red Lobsters. I'll be making these and your cheese biscuits soon. Love you Paula ❤❤
Thanks so much for sharing those air fryer biscuits! I bought me one of Mrs. Paula’s air fryers exactly like the blue one in her kitchen after eyeing hers for several episodes. I struggle sometimes with what all to put in it and never thought about biscuits until now. Thanks so much for sharing! Keep the love and best dishes coming. 😘
I love my paula deen air fryer. We use it alot.
I love making those pizzas she showed one day with the naan flatbread. I fix salmon patties, chicken, grilled cheese, birds eye fried green beans, fried catfish, so many possibilities. They are so good and without all the grease. Hope you enjoy your airfryer
Paula you should consider putting your baking mixes and other shelf-stable food items on Amazon. It would make it easy for those of us not near a restaurant to purchase them.
Great idea
That is a good idea..
I would love some tips and tricks for airfryers tia
Those are the lightest, fluffiest biscuits I've ever seen. 😋
She looks so sweet now.
I just love your videos. Nothing better than a good warm homemade biscuit. A little tip I got was to put your cat iron pan in the oven for about 10 minutes before putting your biscuits in it. Grease it with butter then add the biscuits. It gives them a great crunchy bottom.
Ms Paula, I have a pastry fork, and I love them. They come in a two pack for 15 bucks on Amazon, and the set I’ve got have black handles. Great Fellowship Ms Paula
Love that baking center!
Yummy the way they are.
Those biscuits look heavenly delicious. Nothing better than a good old fashioned biscuit. Something I have never been good at making. I need to get some buttermilk and try to make some. I usually just make mayonnaise biscuits. They are good too. Thanks for showing how to make these Paula. Love and Best Dishes.
Could you use the leftover biscuit dough to make dumplings in a soup?
Absolutely! Biscuit dough is great for dumplings. And if you don't have homemade biscuit dough and you want dumplings in your soup, the can biscuits work very well too!
@@stacey5925 Thank you
@@MammaFett My pleasure!
I love putting honey on my biscuits it's the best and it's a snack for me alot
You made me hungry. Well now I have to make biscuits and gravy!
Thank you Paula! I so enjoy watching you and learning new recipes! I hope you don't ever stop making these videos. I hope someday Covid goes away so you will have meet and greets again! I would love to meet you! You are the best!❤😊
That’s a lot of hard work Paula
i cook just like you, my momma used to call it a dunkin egg and that is exactly how we do our day old biscuits, butter and fry them up!
Oh my goodness, that had me salivating. You could just see how tender and fluffy they were, hot out of the oven. Great recipe! 👍❤
Man you know it’s finna be good when there’s a whole bowl-a-butter on the counter before anything else 😂
Oh my land!! They turned out amazing!!! Wow!!! 😍😍😍
That's a great idea Paula, roll the dough into little balls and rolling them into your cinnamon sugar, what a great idea?
Paula, you remind me so much of my Mother, her Laughter, smile and your fun hummer,my Mother was from Lake city,Florida. My Othet has been gone now 14 years and when I'm watching your Show....it's like seeing my Mother and thank you for that.
Hello Julie how are you doing today???
Paula…you need a blending fork to blend in your butter/shortening into your flour! They are great!
Hello linda how are you doing today
Paula, grate your cold butter, honey!!!
Love you Paula. I like butter most of the time, but also love strawberry freezer preserves on them. Yummy
Paula after several failed attempts (we had the wrong kind of flour)we just got done eating (more like devouring)the most wonderfully fluffy and tasty biscuit thanks to your recipe and guidance. My husband was born and raised in Georgia while I bounced back and forth from AZ to Chicago and so eating biscuits was not normal for me. I never watched any of my family members eat them let alone make them so I was completely green behind the ears but if you tasted one of these freshly baked biscuits him and I made you would never know that. I'm hooked now... moving forward no more canned biscuits in this home !!!
I bought a pastry fork on Amazon and it is amazing. I even use it to turn my fried chicken over in deep fat It is one of the best kitchen gadgets I have bought. I use it for other things too, and it is great for blending butter and flour. MMM the biscuits look so good.
I remember my Grandmother making her biscuits with lard and buttermilk. They were the BEST!!! Also, if you have leftover biscuits, try frying them in your cast iron skillet with some butter. Oh...My...Goodness!!! It's awesomesauce!!!
Flaky I'll bet.
Or a little bacon drippings, Fattening, but delish!
My great grandmother made biscuits using lard too. Best biscuits ever.
My grandmother’s always made biscuits with lard, but they would’ve never put sugar in them. I’m not sure how I would like that! But everything Paula makes looks good. Love and best dishes.♥️♥️
Looks so good. Making me hungry.😀
You are absolutely wonderful. So sweet I had given up on the rocks (biscuits) I make and after watching you I am going to try again and if it is not good I will do what you said and throw it away and try again. You are such an awesome lady. Thank you for all you do.
This is something I'd really like to perfect
Im very excited for Thanksgiving and spending time with my dad
Regarding the knuckle-prints, I saw an episode of Alton Brown (Food Network TV) and he indicated that you flatten the biscuits with your knuckles so they will rise evenly. He said if you didn't then you end up with 'dome' shaped biscuits -- something about them heating from the sides first then the middle. It's funny to hear people talk about making things a certain way and when challenged, will say, "...well that's the way grandmother made them!".
Reply
Yes that is correct. It has to do with the CO2 and how the fat in the biscuit melts and releases, so no dome shape if you knuckle your biscuits! Kind of like the theory with puff pastry. I enjoyed watching Alton Brown because he researched the science of food....very interesting.
Eddie and Teresa buy her a comfy handled pastry cutter. That was hilarious.🤣
PLUS HAVE THE A LOT OF BUTTER 🧈 MELTED AND LAY OUT THE BRUSH, SO SHE CAN BRUSH HER BISCUITS ONTOP AND INSIDE AS WELL…..PAULA LOVES REAL BUTTER, GIVE “KERRYGOLD” GRASS-FED BUTTER 🧈 A TRY ♥️🤣
Ms Paula....I have the answer to your question. I used to make biscuits some years ago and what used to happen was while they were baking they would rise up to a point where the air bubble inside would break and the biscuits would fall like a cake and end up looking like cookies. It took me a while but I found that if you press your thumb (or knuckle) in the top of the biscuit before baking they rise up nice and don't fall. Thank you for the video and you are just as beautiful as ever! BTW......I call my favorite kitty "biscuit head". I also use a cast iron skillet as well.
Thank you for sharing this video because it helped me remember my Mom's biscuits and how good they were. I miss her so much.
try freezing the butter then grate it into the flour no cutter needed
Oh wow! I wouldn’t have thought to do that. Great idea!
yep, I commented the same thing lol
I grate my butter! Works great
Boy I tell you what there’s nothing like good old fashion classic flower mix with everything in it that you need. It’s got everything from your Saul and your making about her all the things you have to add sometimes is a little bit of baking soda I love them that it’s ready to go no just add whatever you want. Thank you Miss Paul and Miss Peggy
Biscuits look beautiful!!
Can't get much better than a biscuit.
HOLIDAY RECIPES!!!!!!!! ❤️🎄❤️🎄🦃❤️🦃❤️wooohoooo!!!!!
My mama always put her knuckles in her biscuits and i do the same thing.
Looks yummy. A piece of country smoked ham and some straw berry jam on a butter laden biscuit...I heard your kitty and I was hollering at mine to be quiet...then I realized my 3 were on the bed sleeping...lol
I love to put a nice piece of Country Ham on my homemade biscuit!!
My mama rolled out her scrsos, and put cinnamon sugar on the dough…rolled it up, cut them, and we had “pinwheels”. They were sooo good.❤❤❤
Looks delicious!
This Classic Buttermilk Biscuits recipe looks so delicious Paula.
Pass the Mayhaw jelly!!!! Divine on a biscuit! My mother made this jelly.
Oh my! I'll bet that jelly was delish!
Classic Buttermilk Biscuits
By Paula Deen
Prep time: 20 minutes Cook time: 20 - 25 minutes Servings: 12
Ingredients
4 cups self-rising flour
2 teaspoons sugar
1 teaspoon kosher salt
1 cup cold unsalted butter, cubed
1 ½ cups cold whole buttermilk
2 tablespoons unsalted butter, melted
butter, for serving
Directions
Preheat oven to 425°. Line a large baking sheet with parchment paper.
In a large bowl, whisk together flour, sugar, and salt. Using a fork or pastry blender, cut in cold butter until mixture is crumbly and about the size of peas. Gradually add buttermilk, stirring just until dry ingredients are moistened.
Turn out dough onto a lightly floured surface, and gently knead 3 to 4 times. Pat dough to 1-inch thickness using a light touch; the more you work the dough, the tougher your biscuits will be. Using a 2½-inch round cutter dipped in flour, cut dough without twisting cutter, flouring cutter between each cut. Make cuts close together to minimize scraps. Gently re-pat scraps and cut to use all dough. Place biscuits on prepared pan, sides touching so they rise high. Gently press down top of biscuits with your knuckles; brush with melted butter.
Bake until golden brown, 20 to 25 minutes. Let cool on pan for 5 minutes; serve immediately with butter.
Baking Tips: After you cube the butter, put it in the freezer for a few minutes to get it really cold. Resist the temptation to cut the butter into pieces that are smaller than peas; bigger butter pieces mean taller, flakier biscuits. Use full-fat buttermilk, and give the container a good shake before measuring. If the sides of your biscuits are touching, they will rise higher. Biscuits can be prepared through step 3 and frozen in a heavy-duty resealable plastic bag for up to 2 months. Bake frozen biscuits as directed for 30 to 35 minutes.
Thank you!!
My kids loved my home made biscuits. I'm gonna try yours. Bless you Paula Deen!
Seeing you make those biscuits in the cast iron skillet reminds me of my sweet momma and she did the same thing with the knuckles don’t know why she did it but thank you for all the videos
Eddie amazes me.
They look delicious I'm going to make those
I use the biscuit recipe rolled out to make cinnamon rolls topped with a cream cheese frosting. Add an egg and sugar for pancakes too
I love any kind of a home made buttermilk biscuits
I cannot wait to make them for my family. Love your new kitchen, it's beautiful. 😊
Thanks Paula, you did work like a Trojan. And I'm learning how to cook.
Those biscuits are going to look so yummy and delicious
I love bisquits w butter a honey or jam..homemade is best
Hey Paula! Hello from East Tennessee! I just found your channel. Had I known about it, I would have been a subscriber on the first video.
Hello Paula and crew, hands down great filming by all of you and the recipes are beautiful. I don’t cook many different things but just watching you and your energetic personality and genuineness inspires me! What a nice time I have watchful these videos! Good job team.
