    my favorite bitter melon. yes its an acquired taste n ive acquired it. i made it before but
    braised it but you also added chung choi n sesame oil in your pork hash n steamed it n i learned how to make an easy black bean sauce from your video thanks

    Bitter melon is good to regulate your blood pressure. My Chinese dad used to make this often. I just stir fry my pork and bitter melon to get my bitter melon fix! Thanks for sharing!

    I tell you what haha I made so much pork hash and always said something is missing.. Then saw in my mom's old cookbook honwagin( sp ) set.. abt pickled turnip and to the store I went.. what a difference..that was it the missing ingredient! I make em like you but only difference is i add green onion..
    I just grew bitter melon last summer gave to my aunty..im definitely gonna grow more n try it your way.. Looks so so ono.

    My mom always grew and made stuffed bittermelon....used to tell me "just eat it! bittermelon is like medicine...it's good for you!". Bittermelon Namasu is also very good...the vinegar cuts the bitterness.

      I also make a Burmese bitter melon Pickle that wrings out all the bitterness. My daughter didn't like but when she tasted this she l ike's it. One day I'll make it.

    I have not had bitter melon that I can recollect. I just bought a package from the Saigon Market in Manchester, NH, but I am looking forward to going back to find some of those other ingredients! Thank you for sharing.

      I will be making a Burmese stir fried bitter melon using pork, tomatoes, tamarind and fish sauce. One of my favorites go to. Lucky the bitter melon this week was only .50 a pound. Usually almost $3 a pound. No one in my household likes it so I share it with a friend.

    Tūtū Kauka used to tell a story about going into a Chinese restaurant in Germany (I think?) with Grampa Kauka. They asked if there was any fu kwa (not sure of spelling), not really expecting any, and then the server disappeared into the kitchen. Soon after, the cook came out and said, "WHO ASK FOR FU KWA??" He glared at them and said, "YOU COME BACK TOMORROW". Dutifully, they returned the following day, and the cook happily presented them with a fu kwa dish. I like to think it was stuffed bittermelon!

    We went down to china town and ordered beef and bittermelon cooked in black bean sauce. One day the discussion was about how to cook the bitterness out of the bittermelon. The answer was to use a little more sugar in cooking the bittermelons.

      You really can't tell if it's bitter. I don't like to put more sugar.

      Others have to simmer the bitter melon in water with baking soda, the melon have to be turn over to immerse into the water! Then stuff the mixture and steam or fried will do good to the taste buds! Happy eating. . . 😊

      @marychin170...You can use a salt/water brine and let sit for about 15 minutes. Rinse well and it does take a lot of the bitterness out. I, of course love the bitterness so I leave it as is.

      Great, try other recipes like stuffed. I also like it Burmese style with tamarind, tomatoes, fish sauce, tumeric.

    Before cleaning out the seeds I parboil the bitter melon slices 3 minutes to remove some of the bitterness and make the seeds and white pith easier ti scoop out... thank you for the gravy recipe

    Hi Auntie, are you a Hokkien lang? I mean are your forbears from Fujian? Just curious. I too love this dish but over here in Malaysia we call this veg Bitter Gourd rather than melon. Thank you very much for the recipe! God bless!

      My family is from Canton as a lot of Chinese in Hawaii are from there. I don't speak the language but I know a lot of food words since my mom cooked all the foods.

      Never did, just use as is. However, some melons tend to be more bitter but hard to tell.

    From cooking bitter melons, I noted that bitter mellons with lighter color are less bitter than the greener ones.

      Yes, but you'll change the flavor. Black beans, Chinese style has a distinctive taste.

      Black bean garlic sauce can be used but I buy the plain salted black beans, rinse and mash slightly. If you live on Oahu, I will tell you where to buy it

      Taste it. All kids my age grew up with it. Most didn't like it as a kid but learned to like it.
