We never cook with bitter melon much because it's too bitter for our taste but great tip with the salt soak, we'll give that a try. That filling looks delicious enough it eat on its own! 😋

I will definitely try this. I've loved bitter melon (karela) since I was a kid too! I usually only slice it into discs, then fry, but stuffed looks so delicious as well. Thank you for such a great recipe!
(Also, super excited at this colab. I was actually wondering at the coincidence of two of my favorite vegan channels both coming out with karela recipes at the same time, lol!

Aqedat Islam My husband's mother and grandfather (both from the Philippines) make a simple dish with a diced onion, plenty of garlic, one tomato, and bitter melon cooked down in veg stock. Not too much stock. Less than a soupy consistency. Salt and pepper to taste. (Traditionally you add whisked eggs in at the end until cooked, similar to an egg drop soup, but they leave a portion for me without that before this final step.)

Thanks for the suggestion. It might be a little more fiddly to remove all the seeds from the top, especially for this variety of bitter melon. I find it easier to remove them from the side. I guess it's all up to personal preference. :)
